Ingredients:
- Rice 750gm
- Chicken 750gm
- Potatoes (boiled) 4
- Onion (crushed) 1
- Yogurt 1cup
- White pepper 1tsp
- Lemon juice 2tbsp
- Red chili (whole) 8
- All spices (whole) 1tbsp
- Bay leaf 1
- Nutmeg and mace (powder) 1/2tsp
- Green chili (paste) 1tbsp
- Green chili (small) 10
- Salt 1-1/2tsp
- Oil 3/4cup
- Ginger garlic (paste) 1tbsp
- Green cardamom 6-8
Method:
In a pan heat oil and add onion, ginger garlic paste, salt and yogurt and let it cook. Now add white pepper and boneless chicken to roast till the chicken tenders. Now add boiled potato, small green chili, green chili paste, whole red chili, nutmeg and mace, small cardamom and lemon juice then simmer 5mins. Then in rice add salt, whole all spices and bay leaf boil them until al dente and then drain the rice water. Now in pan add half cup of water and 2tbsp of clarified butter then put half rice in it after that add the chicken mixture and rest of the rice. Lastly add some clarified butter when it get roasted serve it hot.
Ingredients of vindaloo paste:
- Whole red chili 10-12
- Cayenne pepper whole 2
- Ginger 1 piece
- Garlic cloves 6-8
- Fenugreek seeds 1tsp
- Green cardamom 2
- Cinnamon 1piece
- Black pepper 6-8
- Cumin 1tsp
- Vinegar 1/2cup
- Brown sugar 1tsp
- Onion 1 cup
- Vegetable ingredients:
- Potato (boiled) 250gm
- Pea (boiled) 2cup
- Carrot (boiled) 1cup
- Cauliflower (boiled) 1cup
- Fresh coriander, green chili as required
- Oil 3/4cup
- Garlic (chopped) 1tsp
Method:
In a pan take all the vindaloo paste ingredients and set it on medium flame for 10mins. Mash it when it cools down. Now heat oil in a pan and fry garlic cloves. now add 4-5 tbsp of vindaloo paste and let it cook . Then take all the vegetables and a half cup of water and set it for simmering. Lastly mix coriander and green chili and serve it hot.
