Ingredients for roasted veggies:
- Mix vegetables 2 cups
- Oil 2 tbsp
- Salt to taste
- Black pepper as required
For Noodles:
- Soy sauce 3 tbsp
- Vinegar 2 tbsp
- Sesame oil 1 tsp
- Minced garlic 2 cloves
- Whole wheat/ regular noodles 1 packet
For Serving:
- Chopped green onions 2
- Toasted sesame seeds 1tsp
- Black pepper as required
- Hot oil 4 tbsp
Method:
Mix soy sauce, vinegar, sesame oil and garlic. Bake vegetables in oven with oil, salt and black pepper. Add soy sauce mixture in pan and saute noodles in it. Then add roasted vegetables, sesame seeds, black pepper and green onions then drizzle hot oil and serve.
Ingredients for Vindaloo paste:
- Dry red chilies 5
- Coriander Seeds 2 tbsp
- Cloves 5
- Cinnamon 1 inch piece
- Green cardamoms 3
- Black Peppercorns ¼ tsp
- Cumin seeds 1 tsp
- Mustard Seeds 1 tsp
- Garlic 8 cloves
- Ginger 1 inch piece
- Vinegar 2 tbsp
- Tamarind paste 1 tbsp
- Water ¾ cup
For curry:
- Chicken 700gm
- Oil ½ cup
- Onions (diced) 1 cup
- Turmeric ½ tsp
- Salt 1 tsp
- Brown Sugar 1 tsp
- Water ¼ cup
- Tomato puree 1 cup
- Cilantro, green chilies to garnish
Method:
Roast dry red chilies, coriander seeds, cloves, cinnamon, cardamom, black peppercorns, cumin seeds and mustard seeds. Then add ginger, garlic, tamarind paste, vinegar, ¾ cup water and make smooth paste. Now marinate chicken in this paste and leave for 1 hour. Heat oil add onion and fry till golden then add marinated chicken and cook well. Add turmeric, salt, tomato puree and cook till chicken get tender. Add water, brown sugar and let it simmer. Garnish with chopped coriander and green chilies then serve.
