Dum Ka Chicken Recipe | Lively Weekends

Ingredients:

  • Whole chicken 1
  • Yogurt 250 gm
  • Ginger garlic paste 4 tbsp
  • Fried onions 1 cup
  • Diced tomatoes ½ cup
  • Almond or cashew powder 1/2 cup
  • Fresh cream 1 cup
  • Red chillies as required
  • Salt ½ tsp
  • Turmeric ½ tsp
  • All spice ½ tsp
  • Qorma masala as required
  • Milk powder ½ cup
  • Oil 2 cups

Procedure:
Mix all ingredients and marinate chicken pieces for at least 3 hours.
Bake on 250 for 30 to 40 min.

Fried Fish Ingredients:

  • Fish fingers 1 kg
  • Carom seeds a pinch
  • Salt to taste
  • Red chillies crushed 1 tbsp
  • Garlic 1 tbsp
  • White cumin to taste
  • Mix and marinate for an hour.

Ingredients for Batter:

  • Corn flour 1/2 cup
  • Flour 1/2 cup
  • Salt a pinch
  • Soda 1/4 tsp
  • Oil for fry

Kund Ingredients:

  • Milk 2 litres
  • Rice 1 cup
  • Sugar 2 cups
  • Almonds 1 cup
  • Kalakand or barfi 1 cup
  • Saffron 1 pinch

 

Fried Fish Method:

Make batter of thick consistency then dip the fish pieces and deep fry until golden.

 

Kund Method:
Boil and thicken fresh milk.
Wash and boil rice in water without salt. Once partly cooked, grind them on pulse only not too fine. Add in boiling milk and cook for more 10 min.
Coarsely grind almond and saffron with some milk in blender jug.
Add sugar to rice mix and cook for more 5 min.
Turn the stove off then add almond mix and barfi to kheer (do not cook any more).
Stir it well and pour in the dish.

Ingredients for Pastry:

  • Plain flour 1 kg
  • Butter 200 gm
  • Salt to taste
  • Water to knead
  • Milk 1/2 cup

Ingredients for Filling:

  • Chicken or beef 500 gm
  • Eggs 4-5
  • Shredded cheese 1 cup
  • Chopped onions 2
  • Green chilies as required
  • Coriander chopped 1 cup

Method:
Mix pastry ingredients, rub in butter until resembles bread crumbs then knead in a soft dough by adding little milk and water
Butter oven dish, divide dough into two balls.
Roll out first ball not too thin at least 1/2 cm thick then line/ put it in the buttered dish.
Whisk eggs with salt, black pepper coriander and chillies. Put them on side.
Now start layering first spread cooked mince then cheese and chopped onions.
Pour egg mixture.
Roll the other half of the dough and cover the dish with it, close the ends well.
Egg wash, bake for 30 mins on moderate heat.
