Kabsa is an Arabian chicken and rice dish that takes a long time to cook but worth it. this dish is considered as a national dish in many Arab countries.

Ingredients:
- Black pepper 1 tbsp
- Cumin seeds 1 tbsp
- Coriander seeds 2 tsp
- Cloves 1 tsp
- Whole red chili 1 tbsp
- Cinnamon 2 inch stick
- Cardamoms 2
- Nutmeg powder ¼ tsp
For Rice:
- Rice 2 cups
- Mutton ½ kg
- Fried onion 1
- Tomatoes 3
- Tomato paste 2 tbsp
- Garlic 1 tsp
- Ginger 1 tsp
- Salt to taste
- Carrots 2
- Lemon zest of 1 lemon
- Oil ½ cup
- Green chilies 2
- Bay leaves 2
- Crushed almonds for garnishing
- Cashews for garnishing
- Raisins for garnishing
Method:
Roast all kabsa masala ingredients and grind them to powder. Now heat oil adds bay leaves, ginger, garlic, mutton and cook well until meat gets tender. Then add tomatoes, tomato paste, carrots, green chilies, paprika, lemon zest and kabsa masala and cook well. Add water for rice then add rice and cook. Add fried onion and let it simmer.Garnish with nuts and serve.

- Cauliflower ½ kg
- Tahini sauce ½ cup
- Water ¼ cup
- Lemon juice ¼ cup
- Chopped parsley 1 tbsp
- Crushed garlic 2 cloves
- Salt to taste
- Black pepper as required
- Oil 1 cup
- Salt to taste
- Black pepper as required
METHOD:
Pre heat oven to 180 C. Mix tahini sauce, water, lemon, parsley, garlic, salt, black pepper and make sauce. Apply oil, salt and black pepper to cauliflower and bake till golden. Now pour tahini sauce on top and serve.
