Ingredients:
- Fine flour ½ kg
- Dried milk 1 cup
- Butter 50g
- Sugar 1 tsp
- Yeast 1 tbsp
- Salt ½ tsp
- Luke warm water for kneading
Ingredients for topping:
- Green onions 2
- Curry leaves 6
- Green chilies 6
- Finely chopped garlic 10-12 cloves
- Salt ½ tsp
- Sesame seeds 2 tbsp
Method:
Take 1 kg fine flour, 1 cup dried milk, 50g butter, 1 tsp sugar, 1 tbsp yeast and ½ tsp salt and mix it with warm water and knead it. Now make dough and wait until it rise and keep it for 20 minutes. For making topping, in a bowl put 2 green onions, 6 curry leaves, 6 green chilies, 2 tbsp sesame seeds, 10-12 finely chopped garlic and ½ tsp salt and make topping after mixing it. Now make a roti of the dough and put the topping and keep it for 20 minutes. Bake it on 200c for 20 minutes. Til walay naan are ready.
Ingredients:
- Mutton Shank ½ kg
- Roasted flour ½ cup
- Clarified butter 1-1/2 gram
- Red chili powder 2 tsp
- Turmeric 1 tsp
- Coriander powder 1 tsp
- Fennel seeds 1 tbsp
- Star anise 6
- Dry ginger powder ½ tsp
- Cumin 1 tsp
- Salt 1-1/2 tsp
- Mace ½ tsp
- Nutmeg ½ tsp
- Ginger garlic 1 tbsp
- Chopped onion 1
- All spice powder 1 tsp
Method:
firstly in hot plate whole spices roast and grind it .now add red chili powder ,turmeric ,coriander powder ,salt and all spices powder mix then divided in to 2 parts .now add ginger garlic and half spices powder mix .after this mutton add and roast well then add stock and cook bring to boil .after this roasted flour dissolve in water and add .after half an hour in the second frying fan add half clarified butter add and fry the onion and stove off .now add remaining spices add and do the tarka on nihari .

- Mutton pieces 1 kg
- Fried onion ½ cup
- Green chili paste 1 tbsp
- Yogurt 250 gram
- Crushed red chili ½ tsp
- Lemon juice 5 tbsp
- Papaya paste 1 tbsp
- Salt 1 tsp
- Nutmeg, mace powder ½ tsp
- Ginger garlic 1 tbsp
- Oil 4 tbsp
- All spice powder 1 tsp
- Fry potato, lettuce leaves for garnish
Method:
Put fried onion, green chili paste, yogurt, crushed red chili, lemon juice, papaya paste, salt, nutmeg, mace powder, ginger garlic, oil and all spice powder on mutton pieces then leave for 2 hours. Now cook on medium flame for 1 hour. When it get tender then take out in dish and serve with fry potato and lettuce leaves.
