Ingredients for mince:
- Mince ½ kg
- Brown onion ½ cup
- Chili powder 3 tsp
- Coriander powder 3 tsp
- Ginger garlic paste 1 tbsp
- Yogurt 1 cup
- Allspice 1 tsp
- Curry leaves 20
- Chopped coriander leaves ½ cup
- Green chilies big ones 6 whole
- Mint leaves 15
- Oil ½ cup
- Coconut roasted & grinded 1 tbsp
- Sesame seeds roasted & grinded 1 tbsp
- Cashew nuts grinded 10
For serving:
- Fried almonds 2 tbsp
- Boiled eggs 2
- Potato wedges fried as required
Ingredients for rice:
- Boiled rice ½ kg yellow color
- Saffron ¼ tsp
- Screw pine essence 1 tbsp
- Milk ¼ cup
- Brown onion ½ cup
Method for mince:
Heat oil add curry leaves, add ginger garlic, fry, add mince with all the seasonings, fry well, add yogurt and fry well, add roasted and grinded masala with allspice, green chilies, leave it on dum. Lastly add chopped coriander and mint.
Method for riceBoil rice ¾ done. Heat 2 tbsp oil in a pan, add boiled rice, top with brown onion, milk mixed with saffron, color and kewra, top with ¼ cup water, 2 tbsp oil, leave it on dum, remove rice in a platter, spread mince in center of rice, top garnished with fried almonds, boiled eggs, and fried potato wedges.
Ingredients:
- Maash ki daal 250 gm
- Turmeric ½ tsp
- Water 2cups
- Butter 2 tbsp + oil ¼ cup
- Onion 1 thinly sliced
- Roasted n crushed cumin ½ tsp
- Yogurt 2 tbsp
- White pepper ½ tsp leveled
- Crushed garlic 1 tbsp
- Tomatoes 2 chopperised
- Green chilies 3 whole
- Green chilies 2 chopped
- Chili powder ½ tsp
- Crushed red pepper ½ tsp
- Salt 1 tsp leveled
- Allspice ½ tsp
- Coriander leaves chopped 2 tbsp
- Spring onion chopped 3 tbsp
Method:
Maash ki daal 250 gm soak for 1 hour, boil in 2 cups water with ½ tsp haldi till daal nearly done
Heat butter and oil, fry sliced onion till light golden, add in crushed garlic, fry till light pink, add chopperised tomatoes with green chilies and all the seasonings, fry well, add yogurt, fry mixture for about 5 mins, then add boiled daal with ½ cup of water, simmer for 5 mins, lastly add allspice, coriander leaves, green onion chopped, leave it on dum for 5mins.
Ingredients for caramel:
- Sugar 1 cup
- Almonds ½ cup
- Whipped cream 2 cups
- Dry milk powder 1 cup
- Chilled milk ½ cup
Ingredients for fruit salad:
- Bananas 4
- Pineapple 1 tin
- Mixed fruit cocktail 1 tin
- Grapes 1 cup
- Red jelly 1 packet
- Green jelly 1 packet
- Condensed milk ½ tin
Method for caramel:
Dissolve sugar till melted, add almonds, mix well, remove on a greased tray, leave it to set, crush and use.
Method:
Cut fresh fruit and mix with canned fruit, mix milk, dry milk powder, condensed milk and cream, fold in all the fruits, dissolve both the jellies separately in 1 cup water each, remove fruit mixture in a bowl, decorate top with set green and red jell-o, crushed crunch, serve chilled, you can add fresh mangoes, lychees or whatever fresh available in the season.
