Ingredients for chicken:

  • Chicken breasts 2 flattened
  • Butter 2 ounce
  • Garlic crushed 1 tbsp
  • Rosemary 1 tsp
  • Crushed black pepper 1 tsp
  • Salt ½ tsp

Ingredients for pepper sauce:

  • Oil 2 tbsp
  • Crushed red pepper 1 tsp
  • Pineapple 2 slices
  • White vinegar 2 tbsp
  • Sugar 1 tbsp
  • Oregano 1 tsp
  • Paprika 1 tsp
  • Salt ¼ tsp
  • Button red chilies 3 boiled

 

 

Method for chicken:

Heat butter in a fry pan, add garlic and rosemary, add chicken, pan fry for 5 mins, add in the seasonings with ¼ cup water, cook till done, remove in a platter and leave it.

Method for sauce:

For the pepper sauce Blend all together

 

To assemble:
Add the blended sauce to the same pan in which we cooked the chicken, simmer for 2-3mins, pour sauce over cooked chicken and serve with boiled veggies.

Ingredients:

  • Butter 2 ounce
  • Oil ¼ cup
  • Garlic chopped 1 tbsp heaped
  • Crushed red pepper 2 tsp
  • Oregano 1 tsp
  • Chicken powder 1 tsp
  • Salt 1 tsp
  • Crushed black pepper 1 tsp
  • Macaroni boiled 3 cups
  • Stock 1 cup
  • Coriander leaves 3 tbsp
  • Grated cheddar cheese ½ cup

Method:

Heat butter and oil in a wok, fry garlic, add crushed red pepper, oregano with ¼ cup water, add stock, salt, pepper, chicken powder, fold in boiled macaroni, add grated cheese, mix well, add chopped coriander and serve.

Ingredients for muffins:

  • Flour 2 cups
  • Sugar 1 tbsp heaped
  • Baking powder 3 tsp
  • Salt 1 tsp heaped
  • Black pepper ½ tsp
  • Crushed red pepper ½ tsp
  • Chopped green chilies 6
  • dried tomatoes chopped ¼ cup
  • Sweet corn ¼ cup
  • Garlic chopped 1 tbsp
  • Coriander leaves 3 tbsp
  • Milk ½ cup
  • Yogurt 4 tbsp
  • Melted butter ½ cup
  • Egg 1

Ingredients for sandwich filling:

  • Melted butter 4 ounce
  • Lemon juice 1 tbsp
  • Coriander leaves 1 tbsp
  • Garlic powder 1 tsp
  • Boiled and shredded chicken 1 cup
  • Cream cheese 2 tbsp
  • Salt ½ tsp
  • Crushed red pepper ½ tsp

To assemble sandwiches:

  • Lettuce leaves 4
  • Tomato slices 4
  • Cheese slices 4
  • Cucumber slices 4
  • Mayonnaise mix in ketchup 2 tbsp

 

Method:
In a bowl mix all the ingredients together with a wooden spoon or spatula, do not use electric beater, batter would lumpy and thick. Grease and flour muffin pan, bake on 180 d for 20 mins.

Method:

Mix boiled and shredded chicken with butter, lemon juice, garlic and coriander. Heat a pan and sauté the butter chicken mix, add in all the other ingredients and seasonings.

To assemble sandwiches:

Cut muffin from center, put a lettuce then a cheese slice, top with chicken mixture then cucumber and tomatoes, drizzle ketchup and mayonnaise, cover with the muffin top, secure with a skewer.
