Ingredients:

CHARGHA MARINATION:

  • Chicken with bones 1 kg
  • Ginger garlic paste 1 tbsp
  • Green chili paste 1 tbsp
  • Lemon juice 2 tbsp
  • Yogurt ¼ cup
  • Salt as required
  • Red chili powder 1 tbsp
  • Turmeric powder ½ tsp
  • All spice powder 1 tsp
  • Black pepper ½ tsp
  • Chaat masala 1 tsp
  • Red orange color few drops
  • Oil for frying

TOMATO RICE:

  • Rice 500 gm
  • Oil ½ cup
  • Ginger garlic paste 1 tbsp
  • Green chili paste 1 tbsp
  • Onion slices ½ cup
  • Tomato paste 2- 3 tbsp
  • Salt 1 tsp
  • Chicken powder 1 tbsp
  • Cumin 1 tsp
  • Cloves 4- 5
  • Cinnamon 2- 3
  • Star anise 4-5
  • Cardamom powder 1 tsp

 

METHOD:
Mix chicken drum sticks and all the ingredients in a mixing bowl and keep in the fridge for 2 hours. Heat oil in a frying pan and fry the chicken on low heat for 12 to 15 minutes. Then add oil to the pan. Heat and fry onion. Now add ginger garlic paste and green chili paste and fry. Then add tomato paste and all other ingredients and saute it . Then add water and let it boil. Then cook for 10 minutes. Then add rice, mix and leave on dam. When the rice is ready, take out the rice in a serving platter, place the chicken in a pan and garnish and serve.

Ingredients:

  • Meat balls 10 – 12
  • Oil ¼ cup
  • Ginger garlic paste 1 tbsp
  • Tomato puree 1 cup
  • Yogurt ½ cup
  • Salt as required
  • Red chili powder 1 tbsp
  • Mustard 1 tsp
  • Fennel 1 tsp
  • Nigella seed 1 tsp
  • Coriander crushed 1 tbsp
  • Cumin crushed 1 tbsp
  • Green chilies whole 3- 4
  • Green coriander chopped 1 tbsp
  • Ginger julienned 1 tbsp

 

METHOD:
Heat oil in a frying pan and add ginger garlic paste and fry well. Then mix all the pickled spices and fry well. Now add tomato puree and yogurt and cook till oil and gravy separate. Then add meatballs and green chilies and leave on Dam for 2 to 3 minutes. Finally add ginger and green coriander and serve.

Ingredients:

Clarified butter 1 cup
Tragacanth gum 2- 3 tbsp
Almonds 2-3 tbsp
Raisins 3-4 tbsp
Melon seeds 3-4 tbsp
wheat flour 2 cup
Gram flour ½ cup
Cardamom powder ½ tsp
Jaggery powder 1- ½ cup

 

METHOD:
Heat clarified button in a pan, add tragacanth gum, raisins, four mugs and almonds and fry and grind the tragacanth gum – now in the same clarified butter turns wheat grain and fry the gram flour well so that the clarified butter separated then come and put the gram flour mixture in a plate and cool well .Then add all the dried fruit, gum, crushed cardamom, and jaggery mixture and mix to your liking.
