Ingredients:

  • Mutton ½ kg
  • Oil 1cup
  • Onion chopped ½
  • Ginger garlic 1tsp
  • Tomato paste ¼ cup
  • Cumin powder ¼ tsp
  • Turmeric powder ¼ tsp
  • Red chili powder ½ tsp
  • Coriander powder ¼ tsp
  • Salt 2/4 tsp

 

Method:
Heat sunflower oil in saucepan Then add 1/2 piaz (onion) chopped finely
1 tsp hadric lassan (ginger garlic) Then add 1/4 cup tomato paste
1/4 tsp sabu zeera powder 1/2 tsp zeera (cumin seeds) powder
1/4 tsp halthi (tumeric) powder 1/2 tsp red chili powder 1/4 tsp dhanya (coriander) powder 2/4 tsp numac (salt) Cook Then 5 min later when dry Add 1/4 cup kilo keema Then stir til dry 5 min Then add 3/4 cup water
Stir and cover for 10 min on low heat Then serve with hara dhanya (fresh coriander), green chili and lemon as decoration

Ingredients:

  • Milk 2liter
  • Basmati rice as required
  • Condensed milk 200 gm
  • Cardamom 5
  • Cardamom powder ¼ tbsp
  • Crushed pistachio 2 tbsp
  • Crushed almonds 2 tbsp
  • Crushed coconut 2 tbsp
  • Screw pine essence 2 drops
  • Khoya 1/3 cup

 

Method:

Heat/boil 2 liters full fat milk in a saucepan add 1 cup uncooked basmati rice that has been soaking 1 hour in water. Crush the rice with your hands before adding and don’t add the water cook 45 min or til thickened
Cool on medium heat 15-20 min til rice is cooked
1/4 tbsp elachi powder (if not available then 5 crushed elachi)

Serve in serving bowls, one big bowl and decorate with slivered almonds, pistachios and shredded coconut

Ingredients for sauce:

  • Ketchup ¼ cup
  • Tomato sauce ¾ cup
  • tabasco sauce ½ cup
  • Chili garlic sauce 1 tsp
  • Butter 60gm
  • Cayenne pepper powder ½tbsp
  • Onion powder ½tbsp
  • Garlic powder ½tbsp
  • Lemon juice as required
  • Salt to taste

 

Ingredients for Drumsticks:

  • Chicken drumsticks 2 lbs
  • Corn starch ¼ cup
  • Corn starch ½ cup
  • Flour ¼ cup
  • Paprika 1 tsp
  • Garlic powder 1 tsp
  • Cayenne powder 1 tsp
  • Baking powder 2 tsp
  • Black pepper ground 1 tsp
  • Chili garlic sauce 1 tsp
  • Salt 2 tsp
  • Water 2/3 cup
  • Parsley to garnish

Method for sauce:
Keep saucepan on medium heat and add/melt butter
Once butter almost melted, add onion powder, cayenne powder لال مرچ
Add chili powder, garlic powder
Whisk this all together while cooking on saucepan
Then add ketchup, tomato sauce and chili garlic sauce
Whisk this all together while cooking on saucepan
Then add tabasco sauce
8. Whisk this all together while cooking on saucepan
9. Add lemon juice, whisk again
10. Then let it simmer/cook for 5-10 minutes, but don’t let it bubble.
While making sure it doesn’t boil over, make the drumsticks:

First make sauce and keep warm so that it’s immediate put on the fried chicken drumsticks

Method:
1. Put 2 lbs chicken drumsticks in a mixing bowl
2. Add ¼ cup corn starch
3. Coat the drumsticks with corn starch in a mixing bowl, using tongs to pick each drumsticks and ensure it is fully coated with corn starch. As each wing is coated, place it on a rack (like the cooling rack pictured)
4. In a clean mixing bowl, add ½ cup corn starch, flour, paprika, garlic powder, cayenne powder, baking powder, black pepper, chili garlic sauce, salt, and whisk together with hand whisk
5. Add water and whisk until glistening and smooth
6. Heat a frying pan with oil
7. Dip with tongs, each chicken wing inside this mixture and make sure coated all over.
8. Once coated, put in frying pan which already has hot oil and fry each wing
9. Then put in the mixing bowl, the fried drumsticks and then pour the special sauce over them
10. Put on a serving platter
11. Garnish with parsley or coriander, tomato and spring onion
Throughout, keep checking on the special sauce to make sure it is not bubbly or becomes too thick.
