Ingredients:
- Butter ½ cup
- Peanut butter ½ cup
- Brown sugar 1 cup
- Caster sugar ½ cup
- Eggs 2
- Light corn syrup 2 tbsp
- Water 2 tbsp
- Vanilla essence 2 tsp
- Flour 2- ½ cup
- Baking soda 1 tsp
- Salt ½ tsp
- Chopped chocolate 2 cup
Method:
Beat the butter, peanut butter, brown sugar and caster sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Add the flour, baking soda, salt and chocolate chunks. Mix and put a cookie scoop full of batter on trays and bake at 180 degrees C for 12-14 minutes until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.
Ingredients:
- Fish fillets 500 gm
- Celery stick, chopped 1
- Grated nutmeg ½ tsp
- Spring onion chopped 1
- Butter 2 tbsp
- Flour 2 tbsp
- Cream 300 ml
- Milk 1 cup
- Grated cheddar cheese 200 gm
- Salt to taste
- Freshly ground pepper as required
- Breadcrumbs as required
- Chopped parsley for garnish
Method:
Cook the fish with little water, salt and pepper till done. Strain and flake the fish and add to the buttered baking dish. Melt the butter in a saucepan, add the flour and stir. Add the milk and whisk until smooth and thickened and no lumps. Add salt, pepper, chopped celery and spring onion, grated nutmeg, half the grated cheese and cream and mix well and pour the white sauce over the fish. Sprinkle over the remaining grated cheese breadcrumbs and bake at 180 degrees c for 35-40 minutes until lightly golden on top and bubbling around the edges. Garnish with finely chopped parsley before serving.
