Ingredients:
- Flour 2 ½ cups
- Oil 2 tbsp
- Salt 1 tsp
- Sugar 1 tbsp
- Water for kneading
- Melted butter for layering paste
Method:
Knead a soft dough with all above ingredients, keep it for 30 mins, roll the dough and cut into thin strips, spread melted ghee, sprinkle flour on it, now roll it and make pera, rest the perafor 30 mins, roll it with light hand, put on tawa, drizzle with melted ghee, cook until golden.
Ingredients:
- Bengal gram soaked ¾ cup
- Oil ½ cup
- White cumin seeds 1 tsp
- Green chilies 2 slit
- Onion finely chopped 1 cup
- Tomato blended 3
- Garlic paste 2 tsp
- Coriander powder 1 tsp
- Cumin roasted and crushed ½ tsp
- Allspice ½ tsp
- Turmeric ½ tsp
- Chili powder 2 tsp
- Salt 1 ½ tsp
- Coriander leaves chopped 2 – 3 tbsp
- Ridged gourd (finely sliced) 1 ½ cup
- Butter 20gm
Method:
Heat oil in a pressure cooker, add cumin seeds, slit green chilies, chopped onion, fry till light golden, add blended tomatoes, garlic paste, dry seasonings with ¼ cup water and fry well, add soaked chana daal with 1 cup water, pressure cook on high for 10 mins, let the pressure released, add sliced ridged gourd, cook for another 10 mins.lastly add some chopped coriander, serve hot with paratha.
Ingredients:
- Boneless chicken 500 gm
- Salt 1 tsp
- White pepper ½ tsp
- Egg 1
- Flour 2 tbsp
- Corn flour 2 tbsp
- Chili sauce 1 tbsp + 2 tbsp
- Orange red color pinch
- Butter 2 ounce
- Oil ¼ cup
- Chopped garlic 2 tbsp
- Chopped ginger 1 tbsp
- Green chilies 3 chopped
- Cashew nuts broken handful
- Green chili sauce 3 tbsp
- Soy sauce 1 tbsp
- Vinegar 1 tbsp
- Sugar 1 tsp
Method:
Heat butter and oil in a wok, add chopped garlic, ginger and green chilies, fry for 30 secs, add handful of broken cashew nuts, fry till golden, add all the sauces, seasonings, 1 tsp sugar and pinch of food color, add ½ cup water mixed with 1 tsp corn flour, add to the mixture, cook till gravy slightly thick, add the fried chicken, cover and cook till dry.lastly sprinkle some chopped spring onion, serve hot with paratha.
Method for chicken
Marinate chicken with salt, white pepper, egg, flour, corn flour, chili sauce and color for 30 mins, deep fry till golden keep aside.
