Ingredients:
- Curd 400 gm
- Milk 200 ml
- Mango 400 gm
- Husk 2 tblsp
- Mango concentrate 100 ml
Method:
Cut Mango in cubes and keep in the refrigerator. Whisk curd with milk and add husk in it. In a glass layer the mango chunks with mango concentrate then layer of curd mixture then mango chunks and some mango concentrate. Garnish with fresh Mints and serve cold.
2, For Energy booster layer of granola on a curd mixture then a layer of mango chunks and concentrate and then a layer of curd then mango chunks and garnish with mint leaves.
Ingredients:
For Harissa Sauce:
- 10 dried Kashmiri chilies (or other large dried chilies with mild-to-medium spiciness)
- 7 dried chilies, decrease for less heat)
- 1 tbsp cumin seeds
- 2 tsp coriander seeds
- 1 pinch caraway seeds
- 4 cloves garlic, minced
- 1 ½ tsp smoked paprika
- 1 tsp salt
- 2 tbsp lemon juice
- 1 tbsp white vinegar
- 1 tbsp tomato paste
- 1/4 cup olive oil (if avoiding oil, sub water or omit)
Harissa marinated Lamb chops:
- Lamb/veal Chops 1 kg
- Salt to taste
- Raw papaya 2 tblsp / meat tenderizer
- Harissa sauce 3 tblsp
- Lemon juice 2 tblsp
- Sumac powder 1 tsp
- Lemon veggies for serving
- Oil for grill ½ cup
For side line:
- Potato 1 kg
- Salt 1 tbsp
- Cumin seeds powder1 tsp
- Oil for frying
Method:
For sauce, soak dried Kashmiri chilies whole dried chilies in water for 30 min. in a blender put chillies with cumin seeds, coriander seeds, caraway seeds, garlic, smoked paprika, salt, lemon juice, white vinegar, tomato paste & olive oil. Blend it to make paste.
In a bowl, put Harissa sauce, salt to taste, papaya paste, lemon juice, Sumac & marinate Lamb/veal Chops in it for 2 hours then grill it. While grilling, brush some cooking oil and grill both sides. Serve with fried cumin Potatoes and serve with lemon veggies.
