Ingredients:
- Prawns 1/2 kg
- Onions (sliced) 3
- Tomatoes (chopped) 3
- Green chilies 5-6
- Oil 2 tbsp
- Butter 3 tbsp
- Ginger and garlic paste 1 tbsp
- Cream 1/4 cup
- Lemon juice 1 tbsp
- Dried fenugreek leaves 1 tsp
- Salt ½ tsp
- Spices for the Gravy:
- Red chili flakes 1 tsp
- Cayenne pepper powder 1 tsp
- Turmeric powder 1/2 tsp
- Roasted cumin powder 1 tsp
- Chaat masala 1 tsp
- All spice powder 1 tsp
For Garnishing:
- Ginger (julienne) as required
- Cream as required
Method:
Heat oil; fry the onion until golden brown. Add the Ginger Garlic paste and the chopped Tomatoes, once done blend the gravy and set aside. In the same pan, add the butter, all spices, salt and green chilies. Add the blended Tomato paste to the gravy and keep mixing until the Oil starts to float. Now add the Cream and water, add the Prawns, lemon juice and dried fenugreek leaves and let the Prawns cook for about 5-7 minutes. Garnish with ginger and drizzle some cream.
Ingredients:
- Clarified butter 400 gm
- Icing sugar 300 gm
- Flour 700 gm
- Vanilla essence 1 tsp
- Salt 3/4 tsp
Method:
In an electric mixer fitted with a paddle attachment, beat ghee, icing sugar, vanilla essence and salt. Change to a dough hook attachment, add the flour, and knead into a soft dough. Leave covered for 4 hours. Scoop a heaped teaspoon portion of dough and roll between your palms into a ball. Place on a lined baking tray, spaced well apart. Using a small fork, make impressions. Bake at 120 degrees C for 20 – 25 minutes, until cookies turn golden. Transfer to a cooling rack.
