Ingredients:
- Rice broken soaked 1 cup
- Fresh milk 2 ½ liter+ 1 ½ cup + ½ cup
- Milk powder ½ cup
- Dried whole milk(khoya) 250 gm
- Cardamom powder 1 ½ tsp
- Saffron soaked in milk 1 tsp
- Sugar 1 ½ cup
- Fine sugar 1 ½ cup
- Cashew nuts chopped 8-10
- Almonds chopped 2 tbsp
- Pistachio chopped 2 tbsp
- Small clay pots to serve
Method:
Soak rice for 1 hour, now put soaked rice in a blender without water, add 1 cup milk to grind the rice, keep aside. In a pan add 2 ½ litre fresh cow milk, let it boil for 15 mins. Now add in it milk powder mixed with 1 cup of fresh milk mixed with whisk, add to the boiling milk mixture and cook stirring for 5 mins, then put your grinded rice paste in your grinding milk, continuously keep stirring, when it starts to become little thick, then add 1 cup mava, stir with a wooden spoon, add in cardamom powder, dissolve saffron, lower flame, add fine sugar, cook on medium flame till sugar is mixed nicely, add in half qty of nuts, remove from flame, put in small clay pots, garnish with remaining nuts, serve chilled.
Ingredients:
- Split Bengal gram boiled 250 gm
- Rice ½ kg
- Bay leaf 1
- Cinnamon 1 stick
- Black pepper 6
- Salt 1 ½ tsp
- Fried brown onion ½ cup + ½ cup
- Ginger garlic 1 tbsp
- Salt 2 tsp
- Turmeric ½ tsp
- Coriander powder 2 tsp
- Cumin powder 1 ½ tsp
- Chili powder 2 tsp
- Tomatoes 3
- Screw pine essence 1 tbsp
- Yellow color pinch
- Coriander leaves ½ bunch
- Mint leaves ¼ bunch
- Green chilies 4
- Yogurt 1 cup
- Oil as required
Method:
Boil daal till ¾ done. Heat oil, add ½ cup brown onion, ginger garlic with all the dry spices and half cup water, fry well, add finely chopped tomatoes, when tomatoes are soft, add daal with green chilies, 2 tbsp coriander leaves, mint leaves, cover and leave it on dum. Boil rice with whole spices and salt.
To assemble:
In a pan put half the rice, spread the daal mixture with yogurt mixed with fried onion, layer of remaining rice, add some more coriander and mint, sprinkle with kewra and color, put it on dum, mix and serve with raita and kachoomer.

- Oil 2 tbsp
- Ginger chopped 1 tbsp
- Garlic chopped 1 tbsp
- Onion chopped ½ cup
- Mint leaves 3tbsp
- Green chili chopped 2
- Chat masala ½ tsp
- Allspice ½ tsp
- Salt 1 tsp
- Oil to roast
- Beaten eggs 2
- Bread crumbs as required
- Bread slices 2
- Coriander as required
Method:
Cook the daal till soft and dry but not mushy, mash well. Heat oil, fry ginger garlic and onion till soft, add green chili, mint and coriander, cook for few seconds, add allspice, chat masala, mix well, remove from fire and add this mixture to thedaal, dip bread slices in water till just softened and mash, add to the daal mixture with salt, divide the daal mixture into small bowls, flatten to shape like a disc, dip the kebabs in beaten egg, roll in crumbs, shallow fry, serve hot with a chatni.
