Ingredients:
- Caster sugar 1 1/2 cups
- Cocoa powder 6 tbsp
- Salt a pinch
- Egg whites 3
- Oil 2 tbsp
- Vanilla essence 2 tsp
- Walnuts 1 cup
- Walnuts few (for topping)
Method:
Mix caster sugar, cocoa and salt. Add 2 egg whites, oil and the vanilla essence and mix. The mixture should be very thick. If the mixture looks too dry, beat in additional egg white 1 tablespoon at a time. Add the walnuts and fold together using a rubber spatula. Allow the batter to rest for 15 minutes. Drop mixture well-spaced on baking sheets using a cookie scoop. Put additional walnut pieces on top of each cookie. Bake at 180 degrees C for 10-12 minutes, or until the tops are glossy and crackled. Remove carefully once cold as they will be soft and delicate.
Ingredients:
- Potatoes (boiled) 2
- Dry coconut (grated) 5 tbsp
- Lemon juice 2 tbsp
- Green chilies 4
- Cashew nuts 5
- Raisins 7-8
- Salt 1 tsp
- Red chili powder 1 tbsp
- Coriander leaves (chopped) 2 tbsp
- Oil as required
Method:
In the mashed potatoes add salt. Add in the grated dry coconut, coriander leaves and lemon juice. Make small ball of potatoes, fill with the coconut mixture and put cashew nuts and raisins in between. Make round balls out of it. Deep fry in hot oil.
