Ingredients:
- Aubergine (sliced lengthwise) 6
- Tamarind pulp 3 tbsp
- Ground cumin 1 tbsp
- Ground cinnamon ½ tsp
- Red pepper flakes 2 tbsp
- Olive oil 6 tbsp
For salsa:
- Olive oil 2 tbsp
- Onions sliced 4
- Garlic crushed 4
- Mint leaves shredded 2 tbsp
- Lemon juice 2 tbsp
Method:
Sprinkle the aubergine slices on both sides with salt. Allow to drain for 30 minutes, then rinse and pat dry.
To make the salsa, put the onion slices over direct heat on the barbecue cook for 8 minutes Finely chop and mix with the other salsa ingredients, plus some salt and pepper. Set aside.
Combine the tamarind pulp, cumin, cinnamon, red pepper, and olive oil, and mix to a paste. Brush evenly over the aubergine slices and thread them, onto skewers, packing them quite tightly
Cook on the barbecue for 15-20 minutes, turning occasionally, or until soft and crispy. Serve with the onion salsa,

- Chicken sliced 300 grams
- Onion rings of 1 large onion
- Cheddar cheese ½ cup
- Chapatti 4
- Salt ½ tsp
- Black pepper 1 tbsp
- Oil 5 tbsp
- Salad leaves sliced 1-1/2 cup
- Chicken tandoori masala 2 tbsp
- Chopped garlic 2 tbsp
- Soy sauce 2 tsp
- Chili sauce 2 tbsp
Method:
Heat oil in a pan then add onion and fry for 5 minutes. Remove and set aside. In the same pan add garlic and fry for a minute then add beef and fry on high heat for 6 to 8 minutes. Now add chicken tandoori masala, salt, chili sauce, soya sauce, black pepper and fry for a minute and set aside. Now heat chapatti in a pan then place fried onion, chicken, cheddar cheese and Salad leaves then roll and serve.
