Ingredients
- Fenugreek leaves 2 cups
- Oil ½ cup
- Onion 1 ½ cup
- Tomatoes 2 sliced
- Prawns ½ kg
- Ginger garlic paste 1 tsp
- Chili powder 1 ½ tsp
- Coriander powder 1 tsp
- Roasted and crushed cumin 1 tsp
- Salt 1 tsp
- Green chilies sliced 3
- Coriander leaves chopped 2 tbsp
- Yogurt 2 tbsp
METHOD
Heat oil in a wok, add onion, tomato sliced, fry for 5 mins, add ginger garlic paste, all the dry spices, fenugreek leaves, fry well for 2-3 mins, add prawns, green chilies, coriander leaves, fry well for 5 mins until oil comes on top, serve with boiled rice.
Ingredients
- Apple gourd ½ kg
- Salt 1 tsp
- Chili powder ½ tsp
- Turmeric powder ½ tsp
- Dhania powder 1 tsp
- Crushed fennel seeds ½ tsp
- Allspice ½ tsp
- Dried mango powder ½ tsp
- Oil ¼ cup
- Coriander leaves 2-3tbsp
METHOD
Peel Apple gourd, cut into thin slices. Heat oil, add all the spices, fry for 5-7 mins, add sliced Apple gourd with ½ cup water, cover and cook for 15 mins till tender, garnish with chopped coriander leaves.
Ingredients for Kofta
- Chicken mince ½ kg
- Split chickpea lentils 4 tbsp
- Onion 1 grated
- Ginger garlic paste 1 tbsp
- Salt ½ tsp
- Chili powder ½ tsp
- Coriander leaves 1 tbsp
- Green chilies 2 chopped
- Allspice ½ tsp
- Egg 1
- Hard boiled eggs 6
- Oil for deep frying
Ingredients for Gravy
- Oil ½ cup
- Ginger garlic paste 1 tbsp
- Brown onion grounded ½ cup
- Chili powder 1 ½ tsp
- Allspice ½ tsp
- Salt 1 tsp
- Ground cashew nuts 2 tbsp
- Yogurt 1 cup
- Tomatoes 2 blended and sieved
- Coconut powder 1 tbsp
- Saffron ¼ tsp
- Cream 3 tbsp
- Silver paper for garnishing
METHOD FOR KOFTA
Wash mince and Split chickpea lentils, put first seven ingredients for kofta in a pan with ½ cup water, cook until mince and Split chickpea lentils tender and liquid dries, add coriander leaves, green chilies, allspice, mix well, and grind in chopper, add in beaten egg, divide mixture into portions, flatten one portion into a disk, place hardboiled egg in center, work mince round egg to cover completely, make remaining kofta in same way, deep fry till brown and serve
METHOD FOR GRAVY
Heat oil in a pan, add ginger garlic with brown onion, all the spices, yogurt, blended tomatoes, cashew nuts, coconut powder, fry for few mins, cook till gravy thick, transfer to a deep pan, add water, lastly add saffron, garnish with drizzle of cream and silver paper, and serve.
