Ingredients
- Mutton 750 gm
- Chili powder 2 tbsp
- Coriander powder 2 tsp
- Salt 1 tsp
- Orange red color ¼ tsp
- Roasted and crushed cumin 1 tsp
- Allspice 1 tsp
- Dried fenugreek 1-½ tsp
- Tandoori masala 1 tbsp
- Fresh cream 1 cup
- Butter 2 ounce
- Cheese grated ½ cup
- Raw papaya 1 tbsp
METHOD
Marinate mutton with all the given ingredients for 1 hour. Heat a matka, add butter then add marinated mutton. Take a matka, heat it, add butter, mutton pieces with ½ cup water, cover and cook till mutton nearly done, add fresh cream, grated cheese, cover and cook for 5 mins, serve garnished with coriander leaves

- Mutton leg 1-1/2 kg
- Yogurt 1 ½ cup
- Ginger garlic paste 2 tbsp
- Green chili paste 2 tbsp
- Salt 2 tsp
- Black pepper 1 ½ tsp
- Chili powder 1 ½ tsp
- Coriander powder 1 tbsp
- Roasted and crushed cumin 1 ½ tsp
- Lemon juice 2 tbsp
- Orange color ¼ tsp
- Almonds ground 2 tbsp
- Cashew nuts ground 1 tbsp
- Onion brown ground ½ cup
- Green chilies 2-3
- Coriander leaves ½ cup
- Water as required
- Oil ½ cup
Leftover marinade
- Yogurt 1 cup
- Salt 1 tsp
- Chili powder 1 tsp
- Allspice ½ tsp
- Butter 4 ounce
- Plain rice to serve
- Boiled eggs to serve
- French fries to serve
- Papaya 2 tbsp
METHOD
In a bowl, add yogurt, ginger garlic paste, green chili paste, salt, black pepper, chili powder, coriander powder, cumin powder, lemon juice, food color, papaya, marinate mutton leg with this for 2-3 hours. Boil it in 2 cups of water, then roast it. In a blender add almonds, cashew nuts, fried onion, green chilies, coriander leaves, water and blend well into smooth paste. Heat oil, add the prepared paste, leftover marinade and cook for 2 mins, add yogurt, salt, chili powder, allspice, and cook until oil comes on top, add in the mutton leg. In another pan, add ¼ cup water, almonds, cashews, green chilies boiled, then add boiled rice, cook for 5 mins till done.
TO ASSEMBLE
First layer of rice, top with whole mutton leg, gravy on top, garnish with boiled eggs, fries and coriander leaves.
