Ingredients:

  • Mutton 1kg
  • Salt 1-1/2 tbsp
  • Black pepper 1tbsp
  • Ginger garlic 2tbsp
  • Green chilies 5-6
  • Lemon 2
  • Ginger as required
  • Oil ¼ cup

 

Method:
Boil mutton with 2 glass water , salt, ginger garlic and a bit of oil , when ¼ cup stock left then add green chilies , and simmer , when water dries then roast mutton , now add black pepper and mix, lastly add lemon slices and ginger and serve.

Ingredients:

  • Fish 2-3
  • Salt 1tbsp
  • Red pepper powder 1tbsp
  • Coriander 1tbsp
  • Cumin roasted/crushed 1tbsp
  • Dried fenugreek 1tbsp
  • Carom 1tbsp
  • Lemon 1

Ingredients for green spice:

  • Coriander ½ bunch
  • Mint ½ bunch
  • Green chilies 4
  • Tomatoes 1
  • Salt pinch
  • Cumin 1tbsp
  • Garlic 2-3 cloves
  • Oil as required

 

Method:
Add lemon juice on fish then marinate fish with all the ingredients for half hour, now cut fish from the center and add the green spices and cover with thread , lastly shallow fry and serve with salad

Panj saag:

Ingredients:

  • Eruca Sativa 1bunch
  • Spinach 1bunch
  • Fenugreek 1bunch
  • Mustard leaves 1bunch
  • Amaranth Leaves 1bunch
  • Chicken ½ kg
  • Tomatoes 2
  • Garlic 1tbsp
  • Salt 1-1/2 tbsp
  • Turmeric ½ tbsp
  • Red chili powder 1tbsp
  • Green chilies 4
  • Onion 1
  • Oil ½ cup

 

Plum slush :

Ingredients:

  • Tamarind ½ cup
  • Plums ½ cup
  • Sugar ½ cup
  • Black salt ½ tbsp
  • Ice as required

 

Panj saag:

Method:
Heat oil add onion , chicken and garlic now fry , then add tomatoes and dry spices ,now add boiled Eruca Sativa,Spinach ,Fenugreek, Mustard leaves and Amaranth Leaves and simmer , lastly roast well add butter and serve . .

 

Plum slush :

Method:
Soak plums for 4 hours , now deseed plums and add sugar and cook plum well, now cool and add in blender with black salt ,water and ice blend well and serve .
