Ingredients:
- Chicken thighs and legs 8
- Vinegar 1 cup
- Salt 1 tsp
- Water 1 tsp
Ingredients for marination:
- Ginger garlic paste 1 tbsp
- Lemon juice 2 tbsp
- Black pepper powder 1 tsp
- Salt to taste
- Yogurt 2 tbsp
- Crushed green chili 2 tbsp
- Cream 100 grams
- Crushed cumin 1 tsp
- Crushed coriander 1 tsp
- White sesame seeds 1 tsp
- Clarified butter ¾ cup
- Coal 1 piece
For garnishing ingredients:
- Lemon 6-8 slices
- Tomatoes 6-8 slices
- Green chilies 3-4
- Green coriander as required
Method:
Cut mark on chicken pieces. now add vinegar ,salt and water mix and leave for 3 to 4 hours .then strain it and remove water .now add all marination ingredients and leave .then heat oil and cook marinated chicken pieces .after this roast and do then smoke .finally garnish with garnishing ingredients and serve .
Ingredients for kulcha:
- Flour 2 cups
- Baking powder ¾ tsp
- Baking soda ¼ tsp
- Yogurt as required
- Oil as required
- Clarified butter filling as required
For filling ingredients:
- Boiled potatoes 5-6
- Chopped green coriander, green chilies as required
- Chopped onion 1
- Dried fenugreek 1-1/2 tsp
- Chopped ginger 1 tbsp
- Crushed coriander, cumin 1 tbsp
- Black pepper ½ tsp
- Salt as required
Method:
In flour all ingredients mix and knead the soft dough and leave to rise for half an hour .now mashed the boil potatoes and add all ingredients mix and set a side .after 1 hour roll out the dough and add 3 to 4 tbsp of clarified butter and roll it .now make balls and cut it .then potatoes mix fill and roll it .after this bake in oven or hot plate cook .after this brush with clarified butter .and then read Aalu kulcha
Ingredients:
- Boiled red kidney beans 2 cups
- Basmati rice 3 cup
- Chopped onion 1 large
- Ginger garlic paste 1 tbsp
- Mixed all spices 1 tbsp
- Green chilies 5-6
- Clarified butter ½ cup
- Star anise 2
- Lemon juice 2 tbsp
- Raisins 2 tbsp
- Green coriander for garnish
Method:
Heat clarified butter and fry chopped onion .then add all spices and star anise and fry .after this add ginger garlic paste mix and roast .now add boil red kidney beans ,lemon juice and green chilies add ,then add water add and boil then add soaked basmati rice .when its come to dum .then garnish with raisin and green coriander and serve .
