Ingredients:
- Unsalted butter, chilled, chopped 180g
- Eggs 5
- Caster sugar 1/3 cup
- Honey 1/2 cup
- Honey to drizzle 60g
- Vanilla essence 1 tsp
- Ground almonds 2-1/2 cups
- Flour 2/3 cup
- Baking powder 2/3 tsp
- Salt a Pinch of
- Lemons zest 2 lemons
- Juice of lemon 1
- Almonds, chopped 100g
- Icing sugar as required
METHOD:
Heat butter until brown. Remove from heat and cool to room temperature. Beat eggs with sugar, vanilla essence and half the honey until pale and doubled in volume. Fold in ground almonds, flour, baking powder, lemon zest, lemon juice and salt. Pour in two-thirds of burnt butter (stir butter well before adding) and fold to combine. Pour into greased and lined pan and smooth top. Combine chopped almonds, remaining burnt butter, remaining 90g honey and a pinch of salt flakes. Mix well and then scatter evenly over batter. Bake at 180 degrees C turning tin once, for 40-45 minutes until golden brown. Drizzle over extra honey and cool on a wire rack in pan. Serve at room temperature.

- Zucchini sliced 5
- Garlic cloves crushed 2
- Ginger grated 2 inch piece
- Green chilies chopped 2-3
- Nigella seeds 1 tsp
- Oil 4tsp
- Turmeric 1 tsp
- Mint chopped 2 tbsp
- Salt 1 tsp
Method:
Heat oil. Add nigella seeds. When they start sizzling add the grated garlic and ginger and cook. Add the green chillies, turmeric and salt and add the courgetti slices and cook for 8-10 minutes. Sprinkle the chopped mint and serve.
