Ingredients:

  • Eggs 6
  • Oil ¼ cup
  • Onions (chopped) 2 medium
  • Cumin 1 tsp
  • Tomatoes (chopped) 3 medium
  • Red chili powder 1 tsp
  • Salt to taste
  • Turmeric powder ¼ tsp
  • Green chilies(chopped) 2-3
  • Fresh coriander(chopped) ¼ cup
  • All spice powder ¼ tsp

 

Method:
In bowl add eggs, whisk well and set aside. Then heat oil in a pot add onions and sauté until translucent. Then add cumin seeds,tomatoes,red chili powder,salt,turmeric powder, green chilies and mix well. Cover & cook for 2 minutes. Now add fresh coriander and mix. Then add beaten eggs and mix well for 2-3 minutes. Lastly sprinkle all spice powder and serve.

Ingredients For Tamarind And Mint Chutney:

  • Garlic 2-3 cloves
  • Green chilies 2
  • Whole red chilies 4-5
  • Mint leaves handful
  • Cumin roasted & crushed 1 tbsp
  • Salt to taste
  • Tamarind pulp 1 cup

For Preparing The Liver:

  • Mutton liver (cubes) ½ kg
  • Vinegar 2 tbsp
  • Ginger garlic paste 1 tbsp
  • Cumin roasted & crushed 1 tbsp
  • Coriander seeds roasted & crushed 1 tbsp
  • All spice powder 1 tsp
  • Red chili flakes ½ tbsp
  • Turmeric powder ½ tsp
  • Yogurt 3 tbsp
  • Salt to taste
  • Oil ¼ cup
  • Onion (sliced) 1 large
  • Fresh coriander(chopped) 2-3 tbsp

For Assembling:

  • Buns 2
  • Onion rings as required
  • Chaat masala as required
  • Chutney as required

 

Method:
For Tamarind And Mint Chutney, mix and blend all the ingredients and set aside.
Then in a bowl add mutton liver, vinegar, mix well and marinate for an hour. Now on a pan, heat oil, add onion & fry until light golden. Then add marinated liver,mix well & cook on medium flame for 10-12 minutes. Now add ginger garlic paste, cumin seeds, coriander seeds, all spice powder, red chili flakes, turmeric powder, yogurt, salt and mix well. Cover & cook for 30 minutes. Then add fresh coriander,mix well & cook for 6-8 minutes. Now toast the buns on heated pan from both sides with oil. Place the liver on the bun. Lastly assemble with onion rings, chutney and chaat masala. Serve.
