Ingredients:
- Butter 8 gm solidified at room temperature
- Semolina 200 gm
- Caster sugar 100 gm
- Desiccated coconut 50 gm
- Baking powder 1 tsp heaped
- Cream 200 gm
- Milk ½ cup
- Fresh yogurt 2 tbsp heaped
- Cashew nuts as required
Ingredients for Sugar Syrup:
- Sugar 1 cup
- Water ½ cup
- Lemon juice 1 tsp
- Rose water 1 tbsp
METHOD FOR SYRUP:
Cook all till you get a thin runny sticky syrup is formed.
METHOD FOR BASBOOSA:
In a mixing bowl add all the ingredients and mix slightly with a rubber spatula, stir till smooth, pour into a 30 x 9 inches pan, level chop, make cut marks into cubes, place a cashew nut in middle of each cube, bake on 180 D for 30 mins, take out of oven, pour prepared syrup while hot.
Ingredients for Bites:
- Flour 3 cups
- Yeast 1 ½ tsp
- Sugar 1 tbsp
- Salt 1 tsp leveled
- Milk powder 3 tbsp
- Oil ¼ cup
- Egg 1
- Lukewarm water to knead
- Sesame seeds for topping
- Egg for brushing
Ingredients for Filling:
- Chicken breast 1
- Oil 1 tbsp
- Butter 1tbsp
- Flour 2 tbsp heaped
- Milk 1 ¼ cup
- Salt 1 tsp
- Black pepper 1 tsp
- Crushed red pepper 1 tsp
- Oregano leaves 1 tsp
- Pizza sauce 3 tbsp heaped
- Coriander as required
- Green chilies chopped as required
- Mushrooms finely chopped 4
- Olives chopped 3 tbsp
- Sweet corn ½ cup
- Capsicum ½ cut into tiny cubes
- Cheddar cheese grated 1 cup heaped
METHOD FOR DOUGH:
Put all the ingredients together in a bowl, knead into a soft dough with lukewarm water, bang the dough and leave it to rise in an oiled bowl for 1 hour, punch down make into balls.
METHOD FOR FILLING:
Make filling by heating oil and butter, add chicken cubes with seasonings, cook for 5 mins, add pizza sauce, flour and milk, cook till thick, add all the spices, remove and cool, stuff filling in the balls, seal well, leave to rise again in a greased tray for 30 mins, then brush with beaten eggs, top with sesame seeds, bake on 190 D for 20 mins.
Ingredients:
- Beef Mince ½ kg
- Tomatoes ½ kg blended and sieved
- Onion chopped 2
- Bread slices 2
- Ginger garlic paste 1tbsp
- Black pepper 1 tsp
- Salt 1 tsp
- Allspice 1 tsp
- Coriander leaves chopped 2 tbsp
- Green chilies chopped 4
- Lemon juice 2 tbsp
- Crushed red pepper 1 tsp
- Ketchup ¼ cup
- Tomato puree 1 tbsp
- Sugar 1 tsp
- Oil ¼ cup + ¼ cup
- Orange color a pinch
- Crushed garlic 1 tbsp
METHOD:
In a chopper add beef mince with ginger garlic, salt, pepper, onion, coriander leaves, green chilies, lemon juice and bread slices, all spice, grind well until smooth, make kebabs and shallow fry, keep aside.
METHOD FOR TOMATO SAUCE:
Heat ¼ cup oil, add garlic, slightly brown, add chopped onion, fry for 2 mins, add blended tomatoes with ketchup, tomato puree, sugar, salt, orange color, crushed red pepper, add fried kebabs, cook for 10 mins, serve garnished with chopped greens.
