Ingredients:
Tandoori chicken:
- Chicken, boneless cubed 1/2 kg
- Yogurt 1/2 kg
- Tandoori masala 4 tbsp
- Ginger garlic paste 1½ tbsp
- Oil 2 tbsp
For seasoned rice:
- Rice 2 cups
- Oil 2 tbsp
- Red chili flakes ½ tsp
- Garlic Chopped ½ tsp
- Soya sauce 2 tbsp
- Chili sauce 1 tbsp
- Vinegar 1 tsp
- Salt to taste
For Sautéed veggies:
- Oil 1 tsp
- Chopped garlic ½ tsp
- Red chili flakes ½ tsp
- Shredded cabbage 1 cup
- Capsicum chopped 1
- Green onion chopped 1
- Onion, cubed 1
- Salt to taste
Sauce:
- Mayonnaise 6 tbsp
- Chili garlic sauce 4 tbsp
- Milk 2 tbsp
- Chopped coriander 2 tbsp
- Charcoal pieces 1
Method:
For the tandoori chicken, marinate chicken with tandoori masala, ginger garlic paste, oil and yogurt. Cook chicken until tender. Smoke with a piece of red-hot charcoal and few drops of oil. Keep warm. For seasoned rice, boil earlier soaked rice in water and salt till almost done, drain the water. Add 1 tablespoon oil in rice while still in strainer and mix lightly. Heat remaining 1 tablespoon of oil and fry garlic and red chili flakes. Add drained rice, soya sauce and vinegar. Mix lightly. Pour 2 tablespoon of water on rice. Cover and simmer for 5-7 minutes on low flame until steam rises. For sautéed veggies, in a pan heat oil and fry garlic and red chili flakes and add all vegetables and salt. Sauté for 2 minutes. Smoke with a piece of red-hot charcoal and few drops of oil. For sauce, mix chili garlic sauce, milk, coriander and mayonnaise in a bowl and set aside. To assemble, in a greased large dish, spread a layer of hot rice. Now top it with tandoori chicken in the center and sautéed veggies on the sides. Spread the sauce and serve hot.
Ingredients:
- Dark chocolate 100gram
- Biscuits 125gram
- Butterscotch pudding mix 1 cup
- Milk 300ml
- Bananas 2-3
- Salted caramel sauce 60g
For Butterscotch pudding mix:
- Brown sugar 1-1/2 cups
- Caster sugar 1/3 cup
- Dry milk powder 3/4 cup
- Corn flour 1 cup
- Salt 1/2 tsp
- Vanilla essence 1 tsp
To assemble:
- Butter 2 tbsp
- Milk 1 cup
Method:
For Pudding mix:
Combine the brown sugar, caster sugar, dry milk powder, corn flour, salt and vanilla essence in a bowl and mix. For two servings, combine 1/4 cup Butterscotch Pudding Mix with butter and milk in a saucepan. Whisk over low heat, stirring constantly until the mixture boils. Boil gently, stirring constantly, for one minute. Pour into serving dishes and chill until thickened
For Butterscotch banana pie:
Melt 75g of the chocolate. Whizz the biscuits in a food processor into crumbs. Pour the melted chocolate onto the biscuit crumbs and mix. Spread the biscuit mixture across the base and up the sides of a shallow pie tin, then put in the fridge to set Sprinkle the butterscotch pudding powder into the milk and whisk together until smooth. Slice the bananas. Take the tin out of the fridge and spread the salted caramel sauce over the base. Cover the caramel with the banana slices. The pudding will have started to thicken, so give it a brief whisk, then spoon it over the bananas. Put in the fridge for 10 minutes to set. Melt the remaining chocolate and drizzle over the pie to serve.
