Ingredients:
- Eggplant (sliced) half kg
- Oil ¼ cup
- Chopped onion half cup
- Garlic chopped 1 tsp
- Cumin seeds 1 tsp
- Mustard seeds 1 tsp
- Turmeric 1/4 tsp
- Curry leaves 1 stick
- Green chilies 4 – 5
- Tomatoes 2 choperized
- Salt 1 tsp
- Chili powder 1 tsp
- Coriander leaves 2 tbsp
Method:
- Heat oil in a pan add chopped onion with chopped garlic cumin seeds mustard seeds curry leaves, chopped green chilies, when onion golden, add chopped tomatoes, salt, chili powder 1 tsp , turmeric ¼ tsp fry well lastly add bengan, sliced with half cup water cover and cook for dum.
- Lastly add coriander leaves serve with Naan.
