Ingredients:

For the vadas:

  • Chickpea flour 2 cups
  • Salt to taste
  • Red chili crushed 1 tsp
  • Coriander crushed 1tsp
  • Turmeric powder 1/4 tsp
  • Ginger garlic paste 1 tsp
  • Soda a pinch
  • Onion finely chopped onions 1
  • Finely chopped coriander leaves 2 tsp
  • Finely chopped green chilies 1 tsp
  • Water as required
  • Oil for frying

For the Yogurt sauce:

  • Yogurt 2 cups
  • Salt to taste
  • Blended paste of green chilies, coriander, mint leaves, garlic cloves 2 tbsp
  • Mixture of roasted cumin, coriander, dry red chili 1 tbsp

For Tempering:

  • Oil 1 tbsp
  • Green chilies 2-4
  • Cumin seeds cumin 1 tsp
  • Curry leaves 4-5
  • Dried red chilies 2-4

METHOD:
For the vadas:

In a bowl add all the ingredients and mix well add water gradually and mix well to get a batter consistency. Deep fry vadas and dip into the water and keep aside.

For the Yogurt sauce:
Whip the yogurt quite well and add all the ingredients and stir it well.

Squeeze the vadas and add into yogurt sauce so vadas absorb the creamy whipped yogurt sauce. Add the tempering to the dahi vada and serve. Garnish it with coriander.

  • Black gram 1 cup
  • Clarified butter 1/4 cup
  • Onion 1
  • Cumin 1 tsp
  • Green chilies 2
  • Ginger & garlic paste 1 tbsp
  • Tomatoes 3
  • Salt to taste
  • Red chili 1 tsp
  • Black pepper 1 tsp
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • Turmeric powder 1 tsp
  • Whole Red Chilies 6
  • Butter 1 tbsp
  • Ginger, Green Chili, Green Coriander For Garnish

METHOD:
Boil the black gram with turmeric or salt. Then heat clarified butter, add onion, cumin and green chilies. Fry well. Now add ginger garlic paste and fry well. Add tomatoes, salt, red chili powder, black pepper, coriander powder, cumin powder and turmeric powder. Mix well. Then add as required water, cover and cook well. Now add boiled black gram, whole red chili, ginger, green coriander, green chilies and butter. Mix well, cover and cook for about 5 minutes. Serve hot.
