Ingredients:
- Rice, soaked 2 cups
- Chickpeas 2 tins
- Medium onion, sliced 1
- Cumin seeds 1 tbsp
- Salt to taste
- Whole cloves 6
- Whole black cardamoms 2
- Green cardamoms 2
- Cinnamon Stick 1 piece
- Oil as required
- Water as required
- Crushed fennel 1tsp
- Crushed coriander 1tsp
- Green chilies 6
- Yogurt 1/2 cup
- Nutmeg mace 1tsp
METHOD:
In a deep pot, heat the oil and add the sliced onions and Garam masala Fry till the onions become golden .Add a splash of water and all the spices along with yogurt Continue to cook this until the onions soften and the water reduced to about half Add the rice, chickpeas and 3 cups of water. Cook the rice and chickpeas on high heat, Once the water has dried out, heat down to the lowest setting, add nutmeg mace and steam for 10-15 minutes. Then fluff up before serving warm!
Ingredients:
- Mutton ½ kg
- Ginger garlic paste 1 tbsp
- Onion 1
- Green chilies 4 to 5
- Cashews 6 – 7
- Turmeric ½ tsp
- Cream ½ cup
- Yogurt ½ cup
- Black Pepper ½ tsp
- Salt ½ tsp
- Lemon Juice 3 – 4 drops
- Fenugreek ½ tsp
- Chaat masala ½ tsp
- All spice ½ tsp
- Coriander as required
Method:
Boil mutton with ginger garlic paste and turmeric.
Blend onion green, chilies, cashews, fresh coriander and make a paste.
In a bowl add fresh cream and yogurt, black pepper, salt, Fenugreek, chaat masala, garam masala powder Lemon Juice mix well add boil mutton and onion paste in this mixture marinate for one hour.
In a pan add 2 tbsp of oil add mutton and fry till golden brown now add remaining mixture cook until oil separated add fry mutton in it.
Garnish with fresh cream serve with garlic naan.
