Ingredients:
- Chicken Mince 500 gm
- Clarified butter 1/2 cup
- Green cardamoms 2
- Cinnamon 1 inch
- Cloves 2-3
- Onion 1 cup
- Ginger garlic paste 2 tsp
- Tomato 1 cup
- Yogurt 1/2 cup
- Green chilies 5-6
- Coriander seeds 2 tbsp
- Turmeric powder 1 tsp
- Cayenne pepper powder 1 tsp
- Black pepper powder 1 tsp
- Cumin powder 1 tsp
- All spice powder 1 tsp
- Salt to taste
- Fenugreek leaves 2 tbsp
- Spring onions (chopped) 1/2 cup
- Ginger (julienned) 2 inch
- Lemon juice 2 tbsp
- Fresh coriander (chopped) 2 tbsp
Method:
Heat clarified butter in a wok. Then add green cardamoms, cinnamon and cloves. Then add onion and fry until slightly browned. Now add ginger garlic paste and fry until golden brown. Then add tomato and cook for 2-3 minutes until tomatoes are mushy. Now add green chilies, coriander seeds, yogurt, turmeric powder, cayenne powder, black pepper powder and cumin powder and cook until oil separates from the side. Then add chicken mince and salt. Cover and cook until it is cooked.
Now add fenugreek leaves, spring onions, julienne ginger, lemon juice and all spice powder. Mix well. Lastly garnish with fresh coriander. Serve hot.
Ingredients For Kofta:
- Potatoes (boiled and grated) 3 large
- Salt to taste
- All spice powder 1 tsp
- Red chili powder 1 tsp
- Cashews (chopped into small pieces) 2-3
- Raisins (chopped roughly ) 5-6
- Corn flour 1- 2 tbsp
- Oil for deep frying
For Curry Ingredients:
- Oil 1/4 cup
- Onion paste 1 (medium)
- Peanuts (crushed) ¼ cup
- Garlic 3 cloves
- Ginger 1 small piece
- Fenugreek leaves (crushed) 1 tsp
- Coriander powder 2 tsp
- Turmeric powder ½ tsp
- Cayenne pepper 1 tsp
- Red Chili powder 1 tsp
- All spice powder ½ tsp
- Jaggery 1 tsp
- Salt as required
Method:
Mix all ingredients of kofta and mix well then shape them in any form – round, flat like a patty then Heat oil in the pan and fry these from all the sides, till they are golden brown in color.
For the curry, Heat oil in the pan. Add onion paste and fry then add water 1/2 cup along with coriander powder, cayenne pepper, turmeric powder, salt and red chili powder. Sauté the spices for few seconds. Then add the peanuts, stir well. Now add 1/2 cup water and all spice powder. Cover the pan with lid and cook on low medium heat till the curry is reduced to required thickness. Once the curry is cooked, add crushed dry fenugreek leaves to koftas and serve hot.
