Ingredients:
- Chicken (with bones) 500 gm
- Clarified butter 1/2 cup
- Onion sliced 2
- Ginger garlic paste 1 tbsp
- Salt as required
- Red chili powder 1 tbsp
- Cumin powder 1 tsp
- Dry ginger powder 1 tbsp
- Flour 1/2 cup
- Water 1 cup
- Fennel powder 1 tabs
- Lemon 1
- All spice powder 1 tbsp
- Water as required
- Ginger for garnish
- Green coriander for garnish
- Green chilies for garnish
Method:
Heat clarified butter fry onion. Add ginger garlic paste sauté well. Add chicken cook well. Add red chili powder, cumin powder, salt, fennel cook well. Add water cook till chicken is done. Add dissolved flour cook for 10 minute. Give a temper of onion add all spice. Garnish with green coriander, ginger and green chilies.
Ingredients for Masala:
- Oil 1 tsp
- kashmiri red chili 1
- Whole red chilies 4-5
- Split Black gram 1 tsp
- Gram lentil 1 tsp
- Fenugreek ¼ tsp
- Coriander seeds 1 tsp
- Poppy seeds 1/2 tsp
- Cinnamon 1 inch stick
- Cardamom 1
- Cloves 3
- Coconut 2 tsp
Ingredients for Rice:
- Bringle 1/2 kg
- Fried onion 1/2 cup
- Rice 1-1/2 cup
- Oil ½ tsp
- Mustard seed 1/2 tsp
- Curry leaves 7-8
- Turmeric powder 1/2 tsp
- Tamarind (soaked) 2 tbsp
- Tomatoes chopped 3
- Salt to taste
- Chopped Coriander Leaves 2 tbsp
- Green chilies 4
Method:
Sauté all ingredients of masala in oil. Heat oil add fenugreek and curry leaves. Add tomatoes, turmeric, onion, roasted spices and salt cook well. Add bringle cook till is half done. Add as required water then add tamarind pulp and rice cook till it done. Add green masala leave for simmer.
