Ingredients:
For sauce:

  • 1 1/2 cups fresh parsley*
  • 1/2 cup fresh cilantro
  • 1 tsp oregano dried
  • 1/2 small red onion
  • 4 garlic cloves
  • 3 Tbsp red vinegar
  • 2 Tbsp fresh lemon juice
  • Salt to taste
  • 1/4 tsp red pepper flakes (optional, more or less to taste)
  • 3/4 cup olive oil
  • Beef steak
  • Beef steaks 400 gm (2 serving)
  • Salt ½ tsp
  • Crushed black pepper 1/3 tsp
  • Dried herbs ½ tsp
  • Worcestershire sauce 1 tblsp
  • Mustard paste 1 tsp
  • Lemon juice 1 tsp
  • Oil for grilling

 

Method:
Roughly chop onion and garlic. Add onion, garlic, red vinegar, lemon juice and salt to a food processor. Add in parsley, cilantro, oregano and red pepper flakes then pour in olive oil while pulsing several times until herb leaves are finely minced (herbs should have some body and texture).

Spread over meat, poultry, seafood or vegetables or use as a marinade.

Beef steak, in a mixing bowl, mix Worcestershire sauce, mustard paste, lemon juice, dry mix herbs, salt & crushed black pepper. Marinate beef steak in it for 30 minutes and grill it. Spread some chimichurri sauce on it and serve with any sideline.

Ingredients:

  • 500 gm tomatoes, roughly chopped
  • 2 small cloves garlic, peeled
  • 1 small sweet onion, roughly chopped
  • 1 red bell peppers, roughly chopped
  • 1 medium size cucumbers, peeled and roughly chopped
  • 3 tblsp fresh lemon juice
  • ½ tsp Salt
  • ½ tsp black pepper
  • 1 pinch of cumin seeds powder
  • 2 ounces goat cheese, crumbled
  • 2 tablespoons fresh cilantro, roughly chopped
  • 2 tablespoons extra-virgin olive oil
  • Crusty bread (optional)

Method:
Place the tomatoes, garlic, onion, bell peppers, cucumbers, lemon juice, salt, black pepper and cumin seeds powder in a food processor and pulse until almost pureed. Refrigerate in a sealed container for 3 to 4 hours, or until completely chilled. Ladle the soup into individual bowls and top with the goat cheese and cilantro. Drizzle with the olive oil and serve with the crusty bread (if using).
