Ingredients:
- 2 1/4 cups all-purpose flour
- 2 1/4 tsp baking powder
- 3/4 tsp salt
- 3/4 cup unsalted butter room temperature
- 1 1/2 cup granulated sugar
- 3 large eggs room temperature
- 1 1/2 tsp vanilla
- 1 cup whole milk, room temperature
- 1 cup chocolate chips
- 1 packet of store bought chocolate chip cookies
Method:
Vanilla cake:
Preheat the oven to 180. Grease and flour two 7″ cake rounds and line with parchment.
In a medium bowl, whisk flour, baking powder, and salt until well combined. Set aside.
Using a stand mixer fitted with a paddle attachment, cream the butter and sugar on med-high until pale and fluffy (about 3mins). Reduce speed and add eggs one at a time fully incorporating after each addition. Add vanilla. Alternate adding flour mixture and milk.
Gently stir in the chocolate chips.
Bake for 30-35mins or until a toothpick inserted into the center comes out mostly clean.
Place cakes on a wire rack to cool completely.
Ingredients:
Cookie butter cream:
- 250g butter
- 500g icing sugar
- 2 tbsp milk.
- ¼ tsp cinnamon
Method:
Beat the butter and add the icing sugar gradually, add the cinnamon and mix till smooth, add the milk to reach desired consistency.
Assemble the cake with buttercream filling, pipe swirls and add the cookies and chocolate chips.
Cookie monster cupcakes.
Use the same batter as the cake, scoop in cupcake cases and bake for 10-12 minutes at 180 degrees.
Color the buttercream blue and frost the cupcake with a large swirl. Sprinkle blue sprinkles , add fondant eyes and a cookie .
