Ingredients:
- Unsalted butter 250g
- Icing sugar 1 cup
- Vanilla essence 1 tsp
- Egg yolk 1
- Coffee 2 tsp
- Flour 2- 1/3 cups
- Almonds, roasted, finely chopped 1 cup
To sift:
- Coffee 2 tsp
- Icing sugar 1 ½ tbsp
Method:
Beat butter until light. Add icing sugar, vanilla, egg yolk and coffee and beat until combined. Fold in the flour and almonds. Shape into a log. Cross the left end over the right end of the dough to create a loop. Repeat with remaining dough. Arrange cookies on trays and bake at 180 degrees C for 18-20 minutes until golden. Cool completely. Combine extra 1 1/2 tbsp icing sugar and coffee in a bowl and sift over cookies to serve.
Ingredients:
- Prawns 350 gm
- cumin seeds 2 tsp
- Turmeric powder 1 tsp
- whole dry red chilies 2
- cloves 4
- cinnamon 1inch piece
- ginger 1inch piece
- onion sliced 1
- oil 2 tbsp
- white vinegar 3 tbsp
- Salt as Req
Method:
Make a paste of all the ingredients, except the oil, prawns and onion. Heat the oil and when hot, fry the onions. When the onions are brown, add the masala paste and fry on a high heat until the oil leaves the masala. Now add the prawns. Stir until the prawns are cooked. Add salt to taste.
