Ingredients:

  • Surmai fish ½ kg
  • Yogurt 250 gm
  • Fried onion 1 cup
  • Tomatoes 2
  • Green chilies 6
  • Ginger garlic 1 tbsp
  • Turmeric powder ½ tsp
  • Red chili powder 1 tsp
  • Salt ½ tsp
  • Coriander powder 1 tsp
  • Curry leaves 6
  • Nutmeg powder ½ tsp
  • Fresh coriander ½ bunch
  • All spice powder ½ tsp
  • Cumin 1 tsp
  • Oil ½ cup

 

Method:
Wash the fish well. Then in the yogurt add all the ingredients, ginger garlic, cumin and nutmeg powder. Mix well. Now add this mixture in the fish and marinate for a while. Then in a wok heat oil and cook fish on a high flame. Once the water becomes dry add tomatoes, green chilies, fried onion and fresh coriander. Mix well. Now heat oil and fry curry leaves. Add to the fish and cover for 5 minutes. Lastly sprinkle all spice powder and serve hot.

Ingredients:

  • Eggplant (boiled) ½ kg
  • Fenugreek leaves ½ kg
  • Yogurt 250 gm
  • Onions 4
  • Garlic 1 tbsp
  • Cumin 2 tsp
  • Red chili powder 2 tsp
  • Turmeric powder 1 tsp
  • Salt ½ tsp
  • Green chilies 6
  • Fresh coriander 1 bunch
  • Oil ½ cup

Method:
Cut eggplant and boil them well. Then heat oil and fry onions until golden brown. Now add garlic, cumin, red chili powder, turmeric powder, salt and fenugreek leaves. Cook well. then add boiled eggplant and yogurt. Mix properly. Now add green chilies and fresh coriander. Cover and cook well. Lastly dish out and serve hot.

  • Gram flour 2 cups
  • Fenugreek leaves 4 tbsp
  • Wheat flour 1 cup
  • Water 2 cups
  • Red chili flakes 2 tsp
  • Turmeric powder 1 tsp
  • Salt 1 tsp
  • Coriander seeds 1 tsp
  • Fresh coriander ½ bunch
  • Mint leaves ½ bunch
  • Green chilies 6
  • Cumin 1 tsp
  • Garlic 1 tbsp
  • Onion (chopped) 1
  • Oil or clarified butter as required

 

Method:
Cook the water until boiled. Add red chili flakes, salt, turmeric powder, coriander seeds and cumin. Cook well. Then add green chilies, mint leaves, fresh coriander, garlic, chopped onion and fenugreek leaves. Grind it well. Now mix together gram flour and wheat flour. Cook this mixture on the stove. Then add boiled water mixture and knead a hard dough. Now remove and make small balls out of it. Spread evenly. Then heat oil or clarified butter in a tawa pan and fry the parathas well. Lastly place onto a serving plate and serve hot.
