Ingredients:
- Eggplants (small) 5-6
- Oil 4 tbsp
Ingredients for marination:
- Yogurt ½ cup
- Rice flour 2 tbsp
- Salt 1 tsp
- All spice powder 1 tsp
- Coriander powder 1 tsp
- Turmeric ¼ tsp
Ingredients for garnishing:
- Oil ½ cup
- Whole all spice 1 tbsp
- Tomato puree 2 tbsp
- Chopped onion 1
- Ginger garlic paste 1 tbsp
- Salt as required
- Red chili powder 1 tbsp
- Turmeric ½ tsp
- Milk ½ cup
- Cream 4 tbsp
- All spice powder ½ tsp
- Fenugreek leaves ½ tsp
Method:
Cut on eggplants. In a bowl mix all ingredients of marination and apply on eggplants, left for 1 hour. Bake in oven or grill it. Heat ½ cup of oil for gravy. Add onion, grinded ginger garlic paste and whole spice fry well. Add tomato puree, salt, red chili powder and turmeric. Also add milk, all spice powder, fenugreek leaves and cream mix well. After that add eggplants and left for simmer. Dish out garnish with coriander and cream.
Ingredients:
- Bottle gourd 750gm
- Sugar 1cup
- Clarified butter ½ cup
- Green food color few drops
- Small cardamom 3-4
- Whole Dried milk 1cup
- Almonds, pistachios as required
- Powder milk 2tbsp
- Silver paper as required
Method:
Wash bottle gourd, now soak it in hot water for 15 min , now drain it , heat clarified butter in a pan fry cardamom, now add bottle gourd and roast for 10 min , now add sugar , food color,, when water dries add powder milk and dried whole milk , lastly dish out and sprinkle almonds and pistachios ,decorate with silver paper and serve .

- Beef mince ½ kg
- Chopped onion 1
- Ginger garlic paste 1tbsp
- Yogurt ¾ cup
- Salt, pepper, turmeric as required
- Oil ½ cup
- Boil tomatoes 2
- Lentil boil 1cup
- Boil rice 1cup
- Wheat boil 1cup
- Chopped spinach 2cups
- All spice 1tsp
- For temper
- Clarified butter 4tbsp
- Onion sliced 1
- Coriander to garnish
- Green chilies to garnish
- Ginger to garnish
Method:
In a pan heat oil fry onions, add mince, ginger garlic paste, tomatoes , yogurt, salt , pepper and turmeric and roast well . now add lentil, rice, boil daliya , chopped spinach , all spice and ¾ cup of water simmer 90 min , to temper heat clarified butter fry onion , add coriander , green chilies and ginger temper shola and serve .
