Ingredients:

  • Flour 1 cup
  • Baking Powder 1 tsp
  • Baking Soda 1/4 tsp
  • Thick Curd 1/4 cup
  • Caster sugar 1/2 cup
  • Milk 1/4 cup + 3 tbsp
  • Vanilla Essence 1 tsp
  • Oil 1/4 cup
  • Coffee 1 ½ tsp
  • Warm water 1 tsp

Method:
Sieve together the flour, baking powder and baking soda. Mix coffee and warm water. Beat the thick curd & caster sugar. Add 1/4 cup milk, oil and vanilla essence. Mix all ingredients well and add half batter to the cupcake cases. In the remaining batter add the coffee and warm water and top the plain batter with this coffee batter. Bake at 180 degree C for 15-20 minutes.

Ingredients:

  • Ground almonds 1 cup
  • Clarified butter 1 tsp
  • Nutmeg a pinch
  • Cardamom powder 1 tsp
  • Sugar 4 tbsp
  • Dry milk powder 4 tbsp
  • Milk 4 tbsp

To garnish:

  • Coarsely chopped almonds 2-4 tbsp

 

Method:
Heat ghee, add in the ground almonds, cardamom powder and nutmeg powder. Sauté well and then add milk, dry milk powder and sugar. Keep stirring and once it leaves the sides of the pan, remove in a greased lid or flat tin or thaali and let set. Sprinkle coarsely chopped almonds on top and cut in squares or diamond shapes.
