Ingredients for Tacos:
- Fish fillets 300 gm
- Olive oil 1 tbsp
- Red chili powder 2 tsp
- Cumin crushed 2 tsp
- Salt 1 tsp
- Garlic 1tsp
- Lemon juice 1tbsp
- Corn tortillas 12 small
- Cabbage (shredded) ¾ cup
- Oil as required
For Mango Salsa:
- Mango (diced) 1
- Onion (diced) ¼ cup
- Minced fresh cilantro 3 tbsp
- Jalapeno seeded and minced 1/4 cup
- Lime juice 1 tbsp
- Salt to taste
Method:
In a small bowl, combine olive oil, chili powder, cumin, and salt, garlic, lemon. Drizzle over fish. Cook for 10 minutes. Combine all ingredients of salsa in a separate bowl. Assemble tacos with fish, salsa, and shredded cabbage.
Ingredients:
- Rice (soaked overnight in water) 1.5 cups
- Coconut milk 2 cups
- Sugar 1/4 cup
- Salt 1 teaspoon
- Mango 1 large
- Mint and sesame seeds to garnish
Method:
Cook the rice until tender. Meanwhile, place the coconut milk in a heavy pot and heat over medium heat until hot. Add the sugar and salt and stir to dissolve completely. When the rice is about to dum, pour 1 cup of the hot coconut milk over; reserve the rest. Stir to mix the liquid into the rice, and then cook for 10 minutes. Meanwhile, peel the mango. Serve rice (pour over remaining coconut milk) with mangoes and garnish with mint and seeds.
