Ingredients:
- Sugar 2 cups
- Eggs 4
- Oil 1/3 cup
- Flour 2 cups
- Salt 1 1/4 tsp
- Baking powder 2 tsp
- Unsalted butter 4 tbsp
- Milk 1 cup
- Vanilla essence 2 tsp
- To serve:
- Caramel sauce as required
- Flaked sea salt as required
Beat the eggs and sugar until light and fluffy, slowly beat in the oil. Add the flour, salt, and baking powder. In a saucepan, bring the butter and milk just to a boil. Add the vanilla. Remove the pan from the heat, and stir the mixture until the butter is completely melted. Slowly add the hot milk mixture to the cake batter, mixing until everything is well combined. Scrape the bowl, and mix briefly, just until smooth. Pour the batter into a greased deep dish. Bake the cake at 180 degrees C for 40 to 45 minutes, until a toothpick inserted into the center comes out clean, and the top feels set. Remove the cake from the oven, and place it on a rack to cool. Serve in squares. Top with some caramel sauce and a sprinkle of flaked sea salt.
Ingredients:
- Fish 1/2 kg
- Oil as required
- Onions 2
- Garlic Cloves 5-6
- Onions (quartered) 2
- Red Chillies 3 tbsp
- Cinnamon 2 sticks
- Black Cardamoms 2
- Green Cardamoms 5
- Dry Ginger Powder 1/2 tsp
- Black Cumin Seeds 1 tsp
- Ghee 2 tbsp
- Lotus Stem 1
- Turmeric Powder 1 tsp
- Cinnamon 2-3 sticks
- Green Cardamoms 3-4
- Cloves 4-5
- Black Cardamom 1
- Garlic Paste 1 tbsp
- Dry Ginger Powder 1 tsp
- Salt to taste
- Water as required
Rub the fish pieces with some salt. Keep them aside for 15 minutes. Heat some oil in a pan and fry the fish pieces. Once they turn golden brown, take them out in a bowl. Now add sliced onions in same pan and fry till golden brown. Take the fried onions and blend them in the mixer to make a fine paste. Add in garlic, onions, red chillies, cinnamon, black cardamom, green cardamoms, dry ginger powder and black cumin seeds. Add some water and blend all the ingredients together in the mixer to make a thick paste. Take 1 lotus stem, peel it nicely and cut it into diagonal pieces. Heat 1 tbsp oil in a pan, add cinnamon sticks, green cardamoms, cloves, black cardamom. Saute. Add 1 Tbsp garlic paste. Add the diagonally cut lotus stems, turmeric and red chilli powder. Saute. Now, add 1 tbsp of the ground spices and water, cook. Add the brown onion paste. Add the fish pieces, and dry ginger powder and some salt. Serve hot.
