INGREDIENTS
- 1/4 cup olive oil
- 2 Tbsp red wine vinegar
- 4 cloves garlic, minced
- 1 tsp dried basil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 chicken breasts
- 1/2 cup chicken soup
- 2 Tbsp tomato paste
- 1/4 tsp sugar
Method
Combine the olive oil, red wine vinegar, minced garlic, ½ tsp dried basil, salt and pepper. Marinate the chicken with it for few hours. Cook the chicken in little oil in a pan for few minutes until golden brown and cooked through, then remove it to a clean plate. Add the tomato paste, chicken stock, ½ tsp dried basil and sugar. Let the sauce simmer until slightly thickened. Return the chicken to the pan and spoon the sauce over top. Serve.
Ingredients
- 225g butter
- 4 tbsp coffee powder
- 100g walnuts, roasted and chopped
- 225g light brown sugar
- 4 eggs
- 225g flour
- 1 tsp baking powder
For the icing
- 100g butter
- 200g icing sugar
- ½ tsp vanilla essence
- 8-10 walnuts to decorate
Method
Dissolve the coffee in 3 tbsp hot water and set aside. Beat the butter and sugar together, then add the eggs, one at a time. Beat in half the dissolved coffee. Fold in the flour, baking powder, a pinch of salt and half the chopped nuts. Scrape into a greased and lined tin and scatter over the rest of the chopped walnuts, then level the top with a spatula. Bake at 180 degrees C for 30 minutes or until a skewer inserted into the middle comes out clean, then leave to cool completely. To make the icing, beat the butter until smooth, then beat in the icing sugar, the vanilla and the remaining dissolved coffee. Lift the cooled cake onto a board and spread with the icing. Top with the walnut halves, cut into squares and serve.
