INGREDIENTS

  • 1 tablespoon olive oil
  • 2 tablespoons ginger, minced
  • 1 tablespoon garlic, minced
  • 1 kg large tiger prawns
  • 4 tablespoons soy sauce
  • ½ tablespoon sugar
  • 1 teaspoon ground black pepper
  • 2 tablespoons water
  • 2 tablespoons coriander, for garnish

Method
Heat oil. Add ginger and garlic and cook for few seconds until fragrant. Add prawns and stir, add in soy sauce, sugar, pepper and water. Once the prawns are done, serve with some coriander on top.

INGREDIENTS

  • 14 oz dessicated coconut
  • ¾ cup condensed milk
  • 1 teaspoon vanilla essence
  • 2 egg whites
  • ¼ teaspoon salt
  • 4 oz chocolate, chopped

Method
Mix together the coconut, condensed milk and vanilla essence. Beat the egg whites and salt until stiff peaks form. Fold the egg whites into the coconut mixture. Using a mini icecream scoop, form heaping tablespoons of the mixture into mounds on baking sheets, spacing about 1 inch apart. Bake at 160 degrees C for 23-25 minutes, rotating the pans from top to bottom and front to back, until the tops and edges are golden. Let cool on the pans for a few minutes, then transfer to a wire rack to cool completely. If dipping the macaroons in chocolate, melt the chocolate until smooth. Dip the bottoms of the macaroons in the chocolate, letting any excess drip back into the bowl, and return to lined baking sheets. Place the macaroons in the refrigerator for about 10 minutes to allow the chocolate to set.
