Ingredients
- Fresh Orange Juice 2 -¼ cups
- Lemon Juice 1- 1/2 tbsp
- Caster Sugar 3/4 cup
- Heavy Cream 2 cups
- Orange Jelly Crystals 1tbsp
Mix orange juice, lemon juice and sugar. Whisk in cream and orange jelly crystals. Freeze until set.
Ingredients For The Sauce:
- Water 1-½ cups
- Rice Vinegar ⅓ cup
- Lemon Juice ¼ cup
- Soy Sauce 2-½ tbsp
- Orange Juice 2 tbsp
- Brown Sugar 1cup
- Green Onion (chopped) 2 tbsp
- Orange Zest 1tbsp
- Ginger ½ tsp
- Garlic ½ tsp
- Red Chilli Flakes ¼ tsp
- Cornflour 3 tbsp
- Water 2 tbsp
- Chicken:
- Chicken Breasts 2
- Flour 1 cup
- Salt ¼ tsp
- Pepper ¼ tsp
- Olive Oil 3 tbsp
Combine water, rice vinegar, lemon juice, soya sauce and orange juice for sauce into a saucepan. Stir in brown sugar, green onion, orange zest, ginger, garlic and chilli flakes; bring to a boil. Pour 1 cup sauce in the chicken. Reserve the remaining sauce. Mix flour, salt, and pepper in a plate. Remove chicken from the marinade and coat well in seasoned flour. Heat the oil. Cook chicken until browned on both sides. Remove to a paper towel-lined plate. Wipe out the pan. Pour reserved sauce in and bring to a boil. Mix together cornflour and water. Stir into the boiling sauce. Reduce heat to low, add the chicken, and simmer until cooked through.
