Ingredients For Brownies:

  • Unsalted butter (melted) ¾ cup
  • Eggs 2
  • Caster sugar 1 cup
  • Brown sugar ⅔ cup
  • Milk 2 tbsp
  • Vanilla essence 2 tsp
  • Cocoa powder ¾ cup
  • Flour ¾ cup

For The Ganache:

  • Chocolate (chopped) 1 ½ cups
  • Cream ½ cup
  • Sprinkles 1 cup

 

Method:
Mix in the melted butter both the sugars, eggs, milk, and vanilla. Then whisk in cocoa powder until smooth. Add flour gradually, until combined. Spread batter in a greased and lined pan. Bake at 180 degrees C for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
For the Ganache Heat cream and chocolate and stir until smooth. Pour ganache over brownies. Smooth with an offset spatula. Top with sprinkles. Refrigerate until the ganache has set.

Ingredients:

  • Fish fillets ½ kg
  • Prawns 4-6
  • Olive oil 2 tsp
  • Butter 2 tbsp
  • Garlic (chopped) 5 cloves
  • Onion (diced) 1
  • Vegetable stock 1/3 cup
  • Sun-dried tomatoes in oil (drained) 5
  • Cream 1 3/4 cups
  • Salt and pepper to taste
  • Baby spinach leaves 2 cups
  • Mushrooms 1 cup
  • Parmesan cheese (grated) 1/2 cup
  • Parsley (chopped) 1 tbsp

 

Method:
Heat oil. Season the fish fillets on both sides with salt and pepper, and sear in the hot pan. Remove from the pan and set aside. Stir fry the prawns sprinkle some salt and pepper and set aside. In the same pan, melt the butter. Add in the garlic and onion and fry until translucent. Add the mushrooms and stir fry, add the sun-dried tomatoes and the stock, and allow the sauce to reduce down slightly. Reduce heat to low, add the cream and simmer and then add the baby spinach and allow to wilt in the sauce, and add in the parmesan cheese. Allow cream sauce to simmer for a further minute until cheese melts through. Add the fish and prawns back into the pan; sprinkle with the parsley, and serve with steamed vegetables or rice or pasta.
