Ingredients

  • Bread crumbs 1 cup
  • Oil as required

For The Chicken

  • Chicken breast 2
  • Salt, black pepper to taste
  • Swiss cheese 4 slices
  • Turkey 4-6 slices
  • Mayonnaise 3 tbsp
  • Dijon mustard 1 ½ tbsp
  • Salt, black pepper to taste
  • Egg 1
  • Flour 2 tsp

Dijon Cream Sauce

  • Butter 1 ½ tbsp
  • Flour 1 ½ tbsp
  • Milk 1 ¼ cup
  • Dijon mustard 2 tbsp
  • Parmesan or Mozzarella cheese 3 tbsp

Method
1. Cut a pocket into each chicken breast.
2. Fold the cheese in half and place 2 pieces inside each pocket. Do the same with the turkey slice. Close the pocket, seal with 2 toothpicks. Sprinkle with salt and pepper.

SUPER EASY METHOD
1. Mix the mayonnaise, mustard, salt and pepper in a bowl. Spread onto the top and sides of the chicken (not underside)
2. Whisk egg and flour. Dip chicken into egg mixture, then into the breadcrumbs.

FRY
• Fry for 10 to 15 minutes, or until golden brown and just cooked through. Remove toothpicks, serve with the Dijon Cream Sauce.

DIJON CREAM SAUCE
1. Melt butter over medium heat in a small saucepan. Add flour and cook for 1 minute.
2. Add half the milk and whisk until the flour mixture is blended in.
3. Add remaining milk, mustard and cheese. Cook for 3 minutes, whisking constantly, until thickened. It will thicken as it cools.
4. Remove from heat, add salt and pepper to taste. Serve with chicken.

Ingredients

  • Hollandaise sauce 1 tbsp
  • Dijon mustard ½ tbsp
  • Black pepper 1 tsp
  • Lemon juice 1-2 tsp
  • Parmesan or mozzarella cheese 1 tbsp
  • Grilled chicken breast 1
  • Ice berg 1 cup
  • Croutons 1 cup

Method
Tear ice berg. Mix the sauces, herbs and spices.
Add croutons and chicken on top.
