Ingredients
Rice noodles 125 gm / 4oz
For The Sauce
- Tamarind puree 1 ½ tbsp
- Brown sugar 3 tbsp
- Fish sauce 2 tbsp
- Oyster sauce 1 ½ tbsp
For The Stir Fry
- Oil 2 – 3 tbsp
- Onion ½
- Garlic 2 cloves
- Chicken breast (or thigh), thinly sliced 150 gm/5oz
- Eggs, lightly whisked 2
- Bean sprouts 1 ½ cups
- Firm tofu if available ½ cup
- Garlic chives ¼ cup
- Finely chopped peanuts ¼ cup
For Serving
- Lime wedges as required
- Ground chilli as required
- Beansprouts as required
Method
Place noodles in a large bowl, pour over plenty of boiling water. Soak for 5 minutes, then drain in a colander and quickly rinse under cold water. Don’t leave them sitting around for more than 5 – 10 minutes.
Mix Sauce in small bowl.
Heat 2 tbsp oil in a large non stick pan (or well seasoned skillet) over high heat. Add garlic and onion, cook for 30 seconds.
Add chicken and cook for 1 1/2 minutes until mostly cooked through.
Push to one side of the pan, pour egg in on the other side. Scramble using the wooden spoon (add touch of extra oil if pan is too dry), then mix into chicken.
Add bean sprouts, tofu, noodles then Sauce.
Toss gently for about 1 1/2 minutes until Sauce is absorbed by the noodles.
Add garlic chives and half the peanuts. Toss through quickly then remove from heat.
Serve immediately, sprinkled with remaining peanuts and lime wedges on the side, with a sprinkle of chilli and a handful of extra beansprouts on the side if desired (this is the Thai way!). Squeeze over lime juice to taste before eating.

Ingredients
- Whole prawns / shrimp 300 gm / 10oz
For The Broth
- Water 3 cups (750 ml)
- chicken stock/broth 1/2 cup (125 ml)
- Lemongrass 2 stalks
- Ginger 1 piece
- Lemon juice 1tbsp
- kaffir lime leaves 5
- Thai or red chillies 2
- garlic 3 cloves
Soup Add Ins
- Mushrooms 120 gm
- Tomato 1
- Onion 1/2
- Sugar 1 tsp
- Fish sauce 3 tbsp
- Lime juice 3 tbsp
- Coriander/cilantro for garnish
Creamy Tom Yum Option
- Thai roasted chili sauce or paste 1 ½ tbsp
evaporated milk/ coconut milk 1/3 cup (75 ml)
Method
BROTH:
Peel the prawns.
Use a meat mallet or similar to bash the garlic, chilli and lemongrass so they burst open to release flavour. Add into pot.
Crush kaffir lime leaves with your hands. Add into pot.
Add ginger, lime juice, stock and water. Bring to simmer on high heat, cover, then reduce to medium and simmer for 10 minutes.
Strain the broth, discard the prawn shells etc, then return broth into same pot over low heat.
FINISH SOUP:
Add onions and mushrooms, simmer 3 minutes. Add tomatoes, simmer for 1 minute.
Add prawns, simmer 2 minutes or until just cooked.
Stir in sugar and fish sauce, simmer for 1 minute,
add Thai Chilli Paste and coconut milk.
Add lime juice, then taste. Adjust sweet (sugar), salt (fish sauce) and sour (lime) to your taste (trust me, you’ll know when you like it!).
Ladle into bowls and serve with fresh coriander and fresh chilli! This is the CLEAR version of Tom Yum kha.
