Ingredients
- Rice Flour 1 Cup
- Semolina 1/4 Cup
- Egg White 1
- Sugar 1/4 Cup
- Sesame as you required
- Baking Soda 1 Pinch
- Milk Powder 1 tbsp
- Green Cardamom Powder 1/4 tsp
- Milk 1/4 Cup
Method
Take a pan and add Sugar and Milk and melt it on medium flame and turn off the flame and rest it until it become into room temperature.
Now take a bowl and add Rice Flour, Milk Powder, Semolina, Baking Soda, Green Cardamom Powder and mix it well and then add Egg White and mix it well and then add (Step 1) sugar milk and knead it and rest it for 1 hour in room temperature with cover.
Now make small balls and sprinkle sesame and fry it until it become into golden brown color and use medium flame (Your Ghee/Oil should be medium heated) and After that Your andrasay is ready.
Ingredients for the Dough
- All-Purpose Flour-5cups
- Ghee Melted-1/2cup
- Water-1cup
- Salt-1/4tsp
- Carom Seeds-1/4tsp
Filling
- Potatoes mashed ¾
- Chaat masala
- Onion chopped 1
- Dhaniya ½ bunch
- Red chilli flakes ½ tsp
- Salt ½ tsp
- Black pepper ½ tsp
- Green chilli chopped 2
Chaat
- Boiled chick peas
- Water of chick peas ½ cup
- Red chilli flakes ½ tsp
- Haldi ½ tsp
- Zeera ½ tsp
- Dhaniya ½ tsp
- Salt ½ tsp
Imli sauce
- Imli soaked in water 100g
- Water 1 litre
- Salt 1 tsp
- Flakes red chilli ½ tsp
- Cumin ½ tsp
- Red food color ½ tsp
- Slurry of corn flour ½ cup
- Yogurt + zeera raita ¼ cup
- Podina chatni ¼ tsp
Method
Knead dough with flour, ghee, water, carum seeds, for samosa and
let it rest for an hour for good results.
Make channa gravy with chickpeas, and its water, with spices, red
chilli powder, haldi, zeera, dhaniya powder and salt.
Then make imli chatni with soaked imlii and water and cumin, red
food color, and corn flour to thick. Now assemble first fried
samosa along with yogurt raita, podina chatni and imli chatni
serve at iftar
