Ingredients

  • Olive oil 1 tbsp
  • Chicken thigh or breast 2 piece diced cut
  • Onion, chopped 1
  • Garlic cloves, minced 2
  • Crushed tomatoes 800 gm
  • Chicken stock/broth 2 cups
  • Water 2 cups
  • Tomato paste 3 tbsp
  • Worcestershire sauce 2 tsp
  • Canned kidney beans, drained 400 gm
  • Small pasta ½ packet
  • Salt and black pepper 1 tsp each
  • Cottage or mozzarella cheese, grated 1/4 cup

For Minestrone Vegetables

  • Celery as required
  • Carrot peeled and diced 1 large
  • Zucchini, chopped 1
  • Potato 1
  • Green beans 100 gm
  • Baby spinach 60 gm
  • Parsley for garnish

Method
Heat oil over high heat in a very large pot.
Add chicken, cook until starting to turn golden (~2 min) then add garlic and onion. Cook until onion is translucent and chicken is light golden ~ 2minutes. Add carrot, celery and zucchini. Stir for 1 minute to coat in flavour. Add crushed tomato, chicken stock, water, tomato paste, Worcestershire sauce, kidney beans, salt and pepper.
Stir, bring to simmer, then place lid on and adjust heat so it’s simmering gently. Simmer 20 minutes, then add potato and beans.
Simmer 5 minutes, then add pasta. Cook for time per pasta packet MINUS 1 1/2 minutes. Remove from stove, stir through cheese and baby spinach. Taste and adjust for salt and pepper. Serve, garnished with extra cheese and a sprinkle of parsley if desired.

Ingredients

  • Beef minced 1 pound
  • Garlic 1 whole bunch
  • Leek ¼ cup
  • Celery ¼ cup
  • Carrot chopped ½ cup
  • Tomato paste 6 tbsp
  • Tomato purée 1cup
  • Salt to taste
  • White pepper ½ tsp
  • Black pepper ½ tsp
  • Crushed pepper flakes ½ tsp
  • Parsley dried 1 tsp
  • Basil dried ½ tsp
  • Soy sauce 1 tbsp
  • Hot sauce ½ tsp
  • Spaghetti (Tagliatelle) ½ packet
  • Oil as required
  • Olive or vegetable oil 3 tbsp for sauce
  • Butter 2 tbsp for beef
  • Chicken powder 1 tsp
  • Coriander leaves for garnish

Method
Boil pasta to al dente add chicken powder and oil
Cook minced beef. Make sauce by add oil then garlic sauté it then add carrots, celery and leek, now spices now add puree cook it a little till water is almost dry add to blend well add back to back add tomato paste and herbs add minced beef and stock. Keep your bologna little saucy for pasta. Serve with mozzarella on top. And soya leaves or coriander leaves.
