INGREDIENTS:
- Onion ½ cup
- Oil ½ cup
- Rice 2 cup
- Tomato 2 cup
- Green garlic (chopped) 2 cup
- Green chili (chopped) 1 tbsp
- Red chili powder 1 tbsp
- Turmeric powder ½ tsp
- Coriander powder 1 tbsp
- All spice 1 tbsp
- Cumin 1 tsp
METHOD:
Heat oil, fry onions well. Now add all spice and cumin. Cook for about 2 minutes. Then add tomatoes, green chilies, turmeric powder, red chili powder and coriander powder. Cook well. Now add green garlic and cook properly. Then add water along with rice. Cook until the water dries. Cover and cook well. In the end add green chilies and serve hot.
INGREDIENTS:
- Turnip 1 kg
- Carrots (peeled) 1 kg
- Radish 1 kg
- Vinegar 2 tbsp
- Water 2 cup
- Salt to taste
- Red chili (crushed) 1 tsp
- Turmeric powder ¼ tsp
- Black cumin 1 tsp
- Mustard 1 tsp
- Fenugreek 1 tsp
METHOD:
Grind black cumin, mustard and fenugreek well. Then add water in a pot and boil the vegetables for about 5 minutes. Now add salt, turmeric powder and crushed red chili. Cook for about 10 minutes. Then add vinegar and grinded spices. Mix everything well and store it in a bottle.
INGREDIENTS:
For kebabs:
- Beetroots (grated and blanched) 4
- Cloves (minced) 5-6
- Cumin seeds (roasted and crushed) 2 tsp
- Red chilli (crushed) 1 tsp
- Coriander seeds (crushed) ½ tsp
- Onion (chopped) ½ cup
- Desiccated coconut (unsweetened) ¼ cup
- All spice powder 1 tsp
- Salt to taste
- Coriander (chopped) ½ cup
- Bread crumbs 1/3 cup
- Oil for frying
- Pomegranate seeds 1 tbsp
For Beetroot Dip:
- Beetroots (grated and blanched) 1 cup
- Onion (chopped) ¼ cup
- Brown sugar 2 tbsp
- Garlic cloves (chopped) 2 tbsp
- Green chilli (chopped) 1 tsp
- Vinegar 2 tbsp
- Greek yogurt ¾ cup
- Salt to taste
METHOD:
Mix all the dip ingredients. Then mix all the kebab ingredients, shape it and fry until golden brown. Serve.
