Ingredients:

  • Beef mince (take out from mincer twice) ½ kg
  • Raw papaya 2 tbsp grinded
  • Salt 1 tsp
  • Crushed red pepper 2 ½ tsp
  • Allspice 1 tsp
  • Brown onion ¾ cup
  • Yogurt ¾ cup
  • Lemon juice 2 tbsp
  • Clarified butter 1 cup
  • Coriander leaves 2 tbsp
  • Mint leaves 2 tbsp
  • Green chilies 4 chopped
  • Coal 1 for smoke

 

METHOD:

Marinate mince with all the given ingredients for 8 hours, heat clarified butter, add marinated mince, cook for 30 mins on low flame, give dum of coal, serve garnished with chopped coriander, mint leaves and green chilies.

Ingredients:

  • Mutton ½ kg
  • Ginger garlic 1 tbsp
  • Salt 1 tsp heaped
  • Whole mix spices 1 tbsp
  • Water 3 cups
  • Rice ½ kg soaked for 30 mins
  • Column 2
  • Green chilies 25 grinded
  • Coriander leaves ½ cup grinded
  • Coriander powder 1 ½ tsp
  • Salt 1 ½ tsp
  • Ginger garlic paste 1 tbsp
  • Yogurt 1 cup
  • Brown onion ½ cup
  • Potatoes 3 cut into 4 pcs each
  • Gram lentil boiled ½ cup
  • Oil ½ cup

 

METHOD:

Boil mutton with ginger garlic, salt, whole spices and water till ¾ done, keep aside. Grind together green chilies and coriander leaves. Heat ½ cup oil, add brown onion with grinded masala and dry spices, fry well, add potatoes with 1 cup water, cover and cook till potatoes nearly done, add boiled mutton, fry, add yogurt, fry, add boiled daal with soaked rice, then add enough water for rice to cook, cover and cook for 5 mins on high flame, lower flame, cook for 20 mins till done. Serve with raita and kachoomber.

Ingredients for Tart:

  • Flour 9 ounce
  • Salt ¼ tsp
  • Butter (chilled cut into small pieces) 4 ½ ounce
  • Parmesan cheese 2 tbsp
  • Egg 1
  • Cold water 1 – 2 tbsp

Ingredients for Filling:

  • French beans ¼ cup
  • Carrot chopped into cubes ½ cup
  • Spring onion chopped ¼ cup
  • Sweet corn ¼ cup
  • Mushrooms sliced ¼ cup
  • Total vegetables 2 cups blanched
  • Cream 1 ½ packet
  • Cheddar cheese ½ cup grated
  • Eggs 2
  • Egg yolks 3
  • Basil fresh chopped ½ cup
  • Parsley chopped 2 tbsp
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Paprika ½ tsp
  • Mustard ½ tsp
  • Mixed herbs ½ tsp

 

 

METHOD:

Grease a 10 inch loose bottom tart tin, sieve the flour and salt in a food processor, add butter and pulse to combine, then remove in a bowl, add cheese, mix in the egg and water together, add to the dough and form into a soft dough, turn out onto a floured surface and roll out the dough 3 inch larger then the tin, carefully lift the dough into the tin and press to fit, prick the access dough, prick well, chill for 15 mins, then bake blind for 15 mins in a pre-heated oven on 200 D, remove from oven and cool, blanch all the chopped vegetables and cool, scald the cream to simmering in a pan, place the cheese, eggs and egg yolks in a heat proof bowl and pour the warm cream over the mixture, mix, add in all the seasonings and herbs, put the vegetables and tart paste, pour over the cheese filling, bake for 35-40 mins until set, cool in the tin for 10 mins before serving.
