Ingredients:
- Coconut fresh grated 1
- Coriander leaves 2 tbsp
- Green chilies chopped 4
- Lemon juice 2 tbsp
- Salt 1 tsp
- Crushed red pepper 1 tsp
- Potatoes boiled and mashed ½ kg
- Roasted & crushed cumin 1 tsp
- Black pepper ½ tsp
- Egg white 1
- Gram flour 1 cup
- Chili powder ½ tsp
Method:
Grate coconuts and mix with coriander, green chilies, lemon juice, crushed red pepper and salt, keep aside. Boil potatoes and mash, add to it black pepper, roasted and crushed cumin, egg white, mix well. Grease your hands, take a small portion of mashed potatoes, fill with coconut filling, give a round kachori shape, dip in gram flour paste and deep fry.
Ingredients for cake:
- Butter 4- ½ ounces
- Caster sugar ¾ cup
- Eggs 2
- Flour 1 ¼ cup
- Baking powder 1 tbsp
- Baking soda ¼ tsp
- Buttermilk ½ cup
- Butterscotch essence ¼ tsp
- Vanilla essence 1 tsp
Ingredients for almond caramel topping:
- Roasted chopped almonds 1 cup
- Sugar 1 cup
- Cream ½ cup
- Butter 2 tbsp
- Butterscotch essence few drops
- Vanilla essence ¼ tsp
Method:
Grease 8 inch round cake pan, sift together flour, baking powder and soda. Beat butter and sugar till creamy, add eggs one at a time, continue to beat, add both the essence, fold in flour mixture, alternating with buttermilk, put the batter in the prepared pan, bake on 180 d for 30-35 mins.
Method for topping:
Caramelize sugar in a pan until light golden, add cream, add butter, essence to it, keep stirring with a spatula, fold in roasted almonds, pour the caramel glaze over the hot cake, leave it till it sets and serve.
Ingredients:
- Boneless chicken ½ kg
- Boiled rice ½ kg
- Baby onions 3
- Green chilies thick ones 4
- Capsicum cut into square pcs 1
- Whole mixed spice 1 tbsp
- Cumin 1 tsp
- Chili powder 1-½ tbsp
- Salt 1 ½ tsp heaped
- Tomato Ketchup ½ cup
- Vinegar 2 tbsp
- French fries to serve
- Boiled egg to serve
- Oil ¼ cup
Method:
Heat oil, add chicken with whole spices, cumin seeds, fry until chicken changes its color, add chili powder, salt, vinegar, ketchup, add onions, all the greens, cook for 10 mins and remove, spread boiled rice in a platter, top with chicken mixture, serve garnished with fries and boiled egg.
