Ingredients:
- Eggplant ½ kg
- Nigella seeds ½ tsp
- Tamarind pulp ½ cup
- Tomatoes ½ kg
- Crushed red chili 1 tsp
- Red chili powder 1 tsp
- Salt 1 tsp
- Cumin 1 tbsp
- Whole coriander 1 tbsp
- Fennel seeds 1 tbsp
- Oil ½ cup
- Green coriander 1 bunch
- Turmeric 1 tsp
- Green chilies 4
Method:
Roast cumin, whole coriander and fennel seeds in a pan. Cut eggplant in 4 pieces and fry them. Now take out and soak them in tamarind pulp. Add tomatoes, crushed red chili, red chili powder, salt and turmeric in rest of the oil and sauté them. Now add nigella seeds. Also add eggplant and tamarind pulp. Add green coriander and green chilies and leave it on dum for 5 minutes.
Ingredients:
- Chicken kofta 1 packet
- Onion 1 (large)
- Garlic 1 tbsp
- Ginger 1 tbsp
- Oil ½ cup
- Salt ½ tsp
- Cream 1 packet
- Cream cheese ½ cup
- Dried fenugreek leaves 2 tbsp
- Turmeric powder 1 tsp
- All spice powder 1 tsp
- Dry red chili paste 4 tbsp
- Cumin seeds 1 tbsp
- Yogurt 2 tbsp
- Nutmeg a pinch
- Mace a pinch
- Red chili powder 1 ½ tsp
- Chicken stock 4 cups
Method:
Heat oil and fry chicken koftas for 5 minutes. Then remove it. Now in the same pan fry onion until golden brown. Then add garlic and ginger, fry well. Now add the remaining ingredients and cook for 5 minutes until the mixture gets to boil. Then add fried chicken koftas and mix well. Lastly cook for another 5 minutes and serve hot.
Ingredients:
- Dried mango powder 2 tbsp
- Red chilies (whole) 6
- Cumin (roasted) 1 tsp
- Black salt 1 tsp
- Dried ginger 1 tsp
- Garlic 6 cloves
- Mint leaves 1 bunch
- Yogurt 1 cup
- Water ½ cup
- Green chilies 250 gm
- Oil for frying
Method:
In a blender add dried mango powder, whole red chilies, roasted cumin, black salt, dried ginger, garlic, mint leaves, yogurt and water. Blend it well. Then add this mixture into the green chilies. Now heat oil and fry them well. Serve hot.
