Ingredients for katori:
- Potato 6 to 10
- Eggs 2 – 3
- Salt as required
- Flour as required
- Bread crumbs as required
- Oil for frying
Ingredients for Chaat:
- Chickpeas boiled 1 cup
- Tomato chopped ¼ cup
- Onion chopped ¼ cup
- Green chili big chopped ¼ cup
- Fresh coriander chopped 1tbsp
- Salt hasbe zarurat
- Chat masala 1tsp
- Tamarind pulp ¼ cup
Ingredients for Green chutney:
- Coriander chopped ½ cup
- Mint chopped ½ cup
- Green chili chopped 1 se 2
- Garlic chopped 3 se 4
- Sugar 1 tbsp
- Salt as required
- Cumin 1 tsp
- Tamarind pulp ¼ cup
Ingredients to assemble:
- Katori 10- 12
- Chaat 1 cup
- Green chutney as required
- Sweet yogurt as required
- Papri as required
Method:
Katori bananay kay liye aaloo ko darmiyan se kat ker ubal lain phir aloo ko center se khali ker lain.
Ab ek mixing bowl men andon men salt dal ker andon ko bhait lain phir ublay aloo ko mayday se coat ker kay anday men dip ker kay bread crumbs se coat ker kay deep fry ker lain jab golden color ajae to nikal lain.
Chat banany kay liye ek mixing bowl men chat kay tamam ajza dal ker mix ker lain.
Green chutney banany kya liye blender men chutney kay tamam ajza dal ker thoray se pani kay sath blend ker lain.
Chat bananay kay liye katori men chana chat dal ker upper se green chutney, meetha dahi or papri dal ker serve karen.
Ingredients for Samosa sheet:
- Flour 1 cup
- Salt as required
- Cumin crushed 1 tsp
- Carom 1 tsp
- Clarified butter 2 tbsp
- Water as required
- Oil for frying
Ingredients for Samosa filling:
- Chicken chunks ½ packet
- Potato small dice boiled 1 cup
- Oil 2- 3 tbsp
- Onion chopped ¼ cup
- Garlic paste 1 tbsp
- Green chili small paste 1 tbsp
- Salt as required
- Turmeric ¼ tsp
- Red chili powder 1tsp
- Coriander crushed 1tbsp
- Coriander chopped 1tbsp
- Lemon juice 2tbsp
Method:
Samosa sheet bananay kay liye ek mixing bowl men melted ghee or pani dal ker salt, ajwain or zeera shamil ker kay mix ker lain phir maida dal ker aata goondh lain.
Filling bananay kay liye pan men oil garam ker kay onion ko sauté ker lain phir garlic or hari mirchon ka paste dal ker fry karen ab chicken chunks dal ker achi tarhan bhoon lain phir tamam masalay, boiled aaloo, hara dhanai or lemon juice dal ker mix karen phir 1 s e 2 minutes tak paka ker filling ko thanda ker lain.
Samosa bananay kay liye samosa patti ko bail ker round cutter se kat lain phir center men filling rakh ker samoson ko mukhtalif shapes men fold ker lain.
Ab ek karahi men ghee ya oil garam ker kay samoson ko dhimi aanch per golden fry ker lain.
Ingredients:
- Milk 1 cup
- Milk powder full cream 2 cups
- Clarified butter 2 tbsp
- Sugar ½ cup
- Pineapple chunks ½ cup
- Coconut crushed 2 tbsp
- Yellow food color few drops
- Almonds slices for garnish
Method:
Pan men ghee, milk powder or milk dal ker mix karen phir low flame per itna pakaen kay mixture garha ho jae phir sugar, pineapple or coconut dal ker pakaen mixture phir se patla hojae ga but phir se mazeed itna pakaen kay mixture phir se garha ho jae phir kisi dish men butter paper laga ker is mixture ko us per dal ker badam laga ker thanda ker kay pieces men kat ker serve karen.
